Neer dosa is a popular South Indian dish, originating from the coastal regions of Karnataka, particularly in Mangalore and Udupi. The name "neer dosa" translates to "water dosa" in Kannada, reflecting its thin, lacy texture and the watery consistency of the batter.
Ingredients:
Rice: The primary ingredient, typically soaked for a few hours.
Water: Added to the rice to create a thin batter.
Salt: To taste.
Preparation:
Soaking: The rice is soaked in water for about 4-5 hours.
Grinding: The soaked rice is then ground to a smooth paste, adding water gradually to achieve a thin, watery consistency.
Fermentation (optional): Unlike many other dosa varieties, neer dosa batter does not require fermentation, although some recipes allow for a brief resting period.
Cooking: The batter is poured onto a hot, greased griddle (tawa) in a thin, even layer. It is cooked on one side until set and does not require flipping.
Characteristics:
Texture: Soft, thin, and delicate, with a slightly crispy edge.
Taste: Mild and slightly tangy due to the natural flavor of rice.
Appearance: Translucent white with a lace-like pattern.

Neer dosa is typically served with a variety of accompaniments such as:
Coconut chutney: A blend of coconut, green chilies, and spices.

Wrong way of making nirdosa and folding method is done on the tava and the dososa are should be very thin , not thick as you did

Neer dosai is never folded on tawa.This is the correct way, although traditionally one uses a cast iron neer dosai pan.

Thinner ones add 2 cups water for 1cup rice. Then it will be like your mother's neerdosa.
