It actually fell off not because of lack of smoothness, but because he revved the engine to quickly, causing it to rock on it's mountings. More gentle use of the throttle and that probably wouldn't have happened.

The bonnet has a slope, it is not flat so the tray would obviously need something to hold it in place. And the test is to check whether the eggs fall off from the tray or not.
