Hey JP, very cool you got to do a review for them. Seems maybe they could put together a good instruction manual to help things out. Now a change of subject. I have done a couple of cooks on the IVS. Damm fun,it's going to be awhile before I fire up my WSM or offset. And now I understand why I haven't seen you use water in it. I'm mostly still using water but like the instructions say it's difficult to get it above 250 f with water. With ribs and chicken I will start with water then about 30 minutes from the end of the cook I dump the water. That allows the skin to crisp up and develop a nice crust on my dry rub ribs.
