They're basically huffing small doses of ammonia. Smelling salts have been used for centuries to revive people who have fainted because it triggers a breathing reflex, as the body recognizes the odor of ammonia and reacts quickly to clear the airways. It's unlikely they gain any competitive advantage because the medical effects are very short-term. It's more of a superstition than anything at this point.
