Remember while your creation may not be a ‘classic” Italian dish, anything you make in Italy from locally produced items is Italian. Let me say that this personal challenge to create from what is available in your area is really creative and fun, also makes you stop and think what it was like for those long before us who had no other choice. One thought for a local ingredient for pasta, you have shown the chestnut trees, what about making chestnut flour for homemade pasta, could be an interesting challenge. Keep the videos coming, we are coming back in October, if things open up.

Nicki, you can use the jar of tomatoes still! The oil just solidified in the fridge. Olive oil does that. Once you take it out and it warms up to room temperature, it will return to it's normal color and consistency. inJOY your meals!

@@NickiPositano I think the Garlic in the Pumpkin should be fine as you can preserve Garlic in Olive Oil so don't see why it should be any different adding it to something.

@@katbar6066 agree. As long as the garlic is submerged, it’s going to be fine. The jars preparation should be like canning.... I keep garlic in good olive oil for a good few months- topping it off a few times- using both oil and garlic 🧄

GIRL!!! I actually AM a chef, and I have to say... all of that looked AMAZING! My mouth is watering at the thought of locally caught and bottled tuna. I love this challenge Nicki, it's a fantastic idea. It really gives you some insight about being self-sustaining and what wonderful meals can come from local ingredients.

I thought you did a great job; nevermind "what foods go together," you did just like they would have had to do in the "olden" times- work with what you have. Feeding the family was the priority, not worrying if it "went" together. I love your experiment. Keep up the good work. Those egg yolks were the brightest yellow I've ever seen.

Over here, people say that a bright yellow yolk means the chicken is well fed and has a proper happy life outside, so the eggs are as healthy as they can be. ;)

When I was growing up my Polish mom would make platski. Basically a potatoe pancake. Grate a few potatoes on the fine side of the grater, grate an onion, add an egg, and some flour not too much and mix it all up. Fry it up like pancakes. I used to sprinkle sugar but you don't have to. So easy to take to the beach!

I gotta say those kale chips looked really good. I never thought about kale chips🤗and they’re so healthy. I use a lot of garlic in my cooking. Garlic thins out your blood making it easy for your heart to pump better...❤️

I think it is important to realize where our food comes from and what we can do to buy and cook local ingredients. It is so much easier when the farmer’s markets open in the summer but our supermarkets are now labeling produce as local or not. Your meals looked fresh and appetizing - bravo!

@@NickiPositano Incidentally there is a Chinese dish a friend from Northern China taught me that you could almost make with the ingredients you have, you're only missing tahini/sesame paste. Stir fry green beans and chopped tomatoes in a bit of oil. Boil some long wheat-based noodles (spaghetti or lingini works fine), when they are done (and still al dente), add them to the pan. Turn off the heat and stir in some sesame paste or tahini to taste. Also season to taste with salt/pepper. Top with some diced or sliced cucumber and scrambled egg. It's so simple and delicious... I think I will make this today! And I'm making Carlo's Mama's soup this week, from your earlier vlog.

Salad and soup look delicious. Don't worry about what other people think. Do what makes you happy. The oil in the tomatoes changes because it's refrigerated. If you let it come to room temp, the oil will soften. As far as the garlic with oil, when it's at room temp is when you may have botulism. If it's mixed together and in the refrig, it needs to be used within 7 days. Really enjoying these videos. Reminds me of our visit to Napoli, Sorrento and Positano 4 years ago.

Just love the idea of eating what you have on hand and not shipped in. The hens are my favorite, they are so plump and love those fresh eggs. My mother often made a dish with white beans and green beans with potato like a stew with chopped tomatoes, that all came from our garden. Thanks for sharing your meals with us.

This is an admirable experiment. Even if you can’t stick to it in the strictest sense, you are being creative and thoughtful and increasing your awareness of the value of local products and sharing with your neighbors. In Houston we’ve had the longest, worst freeze in almost a century. Most of my decorative plants did not survive. I don’t have any hope for my citrus trees coming back to life but my figs trees are so happy. I make fig preserves every year from my bounty and made kumquat preserves several years. It is such a joy to make and share from your garden. Thanks for sharing your garden, and what you make from it, with your viewers.

Hello Nicki and Carlo - thanks for sharing your lives with others. It is fun watching your videos. Stumbled upon your sight during lockdown in the US/Washington DC area. I studied in Rome for 5 years (20 years ago now) and went to Positano every year for a little break at the beach. I've been back a couple times since then but not back in about 10 years. Always stayed at the Pupetto Hotel which is around the walkway from the main part of town - but you probably know that - haha. It is so much fun watching your videos and adventures in the garden, on the beach, and around town. Stay safe and let us hope we can all travel again once life returns to somewhat normal. Goats milk mozzarella isn't too bad! Bit stronger in taste tho. Or you could make chevre, seeing as you know some goats that recently had kids in your area. Edit: If you can forage Cardoon thistle from your local area you can use this as a rennet to make cheese with!

Your locally-homegrown lunch and dinner looks absolutely scrumptious! You're so lucky to have a large garden to "shop" for your produce. I used to live in a place with a wonderful garden out back where I could graze on berries, make salads with greens and carrots, etc. We also had four kiwi plants growing on a trellis but they tended to be rather hard. Hi Nicki, perhaps you can get Lucca to plant Cecchi (chick Peas) they can be ground into flour and you can add chilli and spices to coat all your veggies like cauliflower beans, broccoli, pumpkin etc. to make Pakorah ( the Indian deep-fried snack). You could make ice cream. Local goat milk, honey, eggs, lavender, your homemade jam, etc. I think we use to call it "icebox ice cream" when I was a kid. Just mix up what you want in it and put in the freezer. Every half hour stir it up well until it's to stiff to stir then let it set a hour or so. Or how about tomato ice cream? It's really a thing.

When we were growing up I remember putting sweet maraschino cherries 🍒 and little chunks of sweet pineapple 🍍 in our milk and added some evaporated milk too it too and freezing it ... that’s why we were always out of milk😂. Those were the good old days🤗

What you are doing is amazing! My grandmother grew up in the mountains of Kentucky. In the 1920s and 30s they ate from their garden everyday. On Sundays, they had meat - killed their own chicken or whatever. They also had cows and drank unpasteurized milk. When I asked her about bread, she said no way - we got that from a mill. So, local, but even they did that.

💛😇☝️. Also here is another idea. Polenta. Local product made from corn all over Italy. You can make it creamy make it like a corn bread sweeten it. Look into that. My grandmother from Naples made that many different ways. 😇💐😇💐

Re. garlic: Its my understanding garlic is safe as long as it is completely sound, no deterioration. I base that analysis based on garlic's use in giardinera relish (like what you were making there) as well as in fermented foods such as kimchi and pickles. I will also check out your other comments to see others' consensus on this.

Nicki, don't worry about the garlic. That applies more to leaving it on the counter in oil, where it can develop bacteria. I have jars of roasted Italian sweet red peppers and garlic in oil in my fridge that I've been eating since last summer, and I'm still here. 😁Also, the oil I put on top of the peppers looks just like the odd oil in your jar that you showed up; kind of granular and clumpy. It's fine; just how the cold temps affect the oil.

I don't have a garden so I would literally starve to death! Joking aside, I find that some of my best meals come from combing leftovers from the fridge or just putting things from the pantry together that I may not have thought of before. Everything looked wonderful! We're getting two puppies soon from one of my son's (chihuhua and ??). Another of my sons moved back home in August and I was telling him today that they're going to kick our butts - but they're soooo cute!

What a challenge! I ate my breakfast watching your latest vlog. Needless to say I didn’t grow it. I would imagine in time gone past larders would have been completely stacked with preserved food and sweet desserts - all sourced locally. Thank you for such an interesting presentation - you must spend hours thinking about what you are going to do , filming, editing rechecking ,posting then going through all the comments .
