Just found this today 18/12/23. Cannot believe its 12 years old. Best cooking video I have ever seen. No silly music or zooming in and out, just excellent, practical teaching, thoroughly explaining not just the how's but also the why's. Loved the no nonsense approach to curries. Just googled Nisha and found she has done a lot more videos so will be watching them.

Now I am inspired. I love Chicken curry. I'm off to the supermarket in a moment. I had my first Indian Curry at 8 years old. It was extremely hot for me but too delicious to put down. At 10 years old, on a London trip, I had a craving for a real Indian Curry and found an Indian restaurant where the owner wore a turban. It was 1974 and I was probably the first white kid ever to have walked into an Indian restaurant in London. The owner warned me that it was going to be hot but I wasn't worried. I said nothing - I wanted the genuine article. And I was satisfied.

i've been making home curries for months now but still learned a lot from this video, i think i'll simplify, i'm clearly putting too much in and trying too hard.. my portion sizes are massive too, i love that you had exactly 2 bowls worth.. my curries always end up with too much concentration of the spices, they're overpowering... so will drastically tone it down.

Recipe 1: Creamy Chicken Curry #### Ingredients: - Chicken pieces - Onions, finely chopped - Garlic, minced - Ginger, ground (frozen cubes recommended) - Garam masala (2-3 teaspoons) - Turmeric - Chili powder (to taste) - Creme fraiche (or yogurt/cream) - Ground almonds (optional) - Salt (to taste) - Sugar (optional, for sweetness) - Fresh coriander, chopped (for garnish) #### Instructions: 1. **Prepare the Masala Base:** In a pan, fry onions, garlic, and ginger in oil until onions turn pinkish brown. Add garam masala, turmeric, and chili powder, and cook until aromatic. 2. **Cook the Chicken:** Add the chicken pieces to the masala and cook until the meat is sealed and begins absorbing the spices. 3. **Make It Creamy:** Add creme fraiche to cover the chicken. Stir well and let it simmer. You can add water to adjust the consistency. 4. **Add Flavors:** If desired, add ground almonds for texture. Season with salt and a bit of sugar if you like a sweeter curry. 5. **Garnish and Serve:** Once the chicken is cooked through, garnish with fresh coriander. Serve hot. ### Recipe 2: Rich Tomato-Based Chicken Curry #### Ingredients: - Chicken pieces - Onions, finely chopped - Garlic, minced - Ginger, ground (frozen cubes recommended) - Garam masala (2-3 teaspoons) - Turmeric - Chili powder (to taste) - Tomatoes, chopped - Green and red bell peppers, chopped (optional) - Salt (to taste) - Fresh coriander, chopped (for garnish) #### Instructions: 1. **Prepare the Masala Base:** As in the first recipe, fry onions, garlic, and ginger in oil until onions are brown. Add garam masala, turmeric, and chili powder. 2. **Cook the Chicken:** Add chicken to the masala and cook until sealed. 3. **Add Tomatoes:** Introduce chopped tomatoes to the pan. Cook until the tomatoes lose their rawness and the oil separates, indicating the spices have blended well with the tomatoes. 4. **Vegetable Addition (Optional):** You can add chopped bell peppers or other vegetables for extra flavor and texture. 5. **Season and Simmer:** Season with salt. Let the curry simmer until the chicken is fully cooked. 6. **Garnish and Serve:** Garnish with fresh coriander and serve.
