I used to consider myself quite a dab hand at making curries (usually volcanically hot in my younger, more foolish days :D) but I have learned such a lot from watching your wonderful series - the major thing is that I was making things far too complicated and using far too many and non-appropriate spices, a lot of which were wasted as they were buried under the more 'vocal' ones. I am a very basic cook by anyone’s standards - but - I gave this veg curry a crack tonight and I’m pleasantly surprised. I am thoroughly enjoying what I have concocted. I am sure I’ll be able to improve this dish in the months and years ahead, but for now I am one happy chappy. I have fond memories of the wonderful food I enjoyed when visiting India in years gone past…..and this is a great start to try and replicate those dishes. Thanks for the video Nisha - you have given me a huge amount of encouragement to have a go trying to create some delicious Indian cuisine.

Great video, excellent explanation timing. I may actually be able to make this one. Im in the mountains of honduras so there's hardly any variety of spices for oriental food or indian food. Are your recipies considered southern indian? I ask because when i lived in the USA, i tried both northern and southern. While i like both, my preference is southern style. My all time favorite is chicken tika marsala

Cooked for friends last night (one a trained chef - no pressure then!).Veg curry, leeks (with mustard as you suggested having not found nigella),+ pakoras. All so easy after a days work and delicious to boot! Left-overs (few) yummy lunch today. Wonderful learning about Indian food from you as despite cooking for a living, this is a cuisine I have had very little knowledge of until I discovered you!

Can be either-in this vid they are pre cooked for speed. Raw takes longer, heat needs to be lower but flavours are absorbed better and the finished product tastes finer
