No bake chocolate cheesecake recipe. ASMR Baking.
This recipe doesn't require baking, but there is a lot of mixing and preparing separate ingredients. I add a chocolate sauce and melted dark chocolate for a rich flavor. I've also included a red currant sauce recipe to balance the flavors. It needs something sharp with the rich cheesecake. This recipe was made for a 6" (15cm) springform pan, but you can use a larger pan. Tell me in the comments below your favorite type of cheesecake. 👇
1 block (200g) cream cheese, softened
4 tablespoons sugar
2 tablespoons yoghurt
1 teaspoon lemon juice
2 teaspoons cocoa powder
2 tablespoons hot water
6 ounces dark chocolate, chopped
6-8 Oreo cookies, crushed into crumbs
3 sheets (5g) gelatin
1 cup (250ml) heavy cream
Red currant sauce
6 ounces red currants
3 slices of apple
Juice of 1/2 a lemon
1 cup (250ml) water
Process the Oreos until they're crumbs. You can do this in a processor, or by hand. You can also use whatever cookies you want. Add them to the bottom of a lined springform pan and tap down to make them firm. Place in the fridge to chill. In a large bowl mix the cream cheese with 3 tablespoons of sugar, 2 tablespoons of yoghurt, and 1 teaspoon of lemon juice. Mix until it's smooth. In a cup add the cocoa, 1 tablespoon of sugar, and 2 tablespoons of hot water to make a chocolate sauce. Mix until the cocoa and sugar are mostly dissolved. Add the cream cheese and fold in until it's combined. Whip 3/4 cup (180ml) heavy cream until it's thickened and mix into the cheesecake. You can do this in stages. Bloom three sheets (or 5g) of gelatin for a few minutes. Heat 1/4 cup (60ml) heavy cream until it's warm. Dissolve the gelatin in the warm cream and add to the cheesecake mix. Melt 6 ounces of chocolate and let it cool a bit. Fold in a small amount of the cheesecake into the chocolate and then add it all back into the cheesecake mixture. Pour into the cake pan and smooth the top. Tap the pan to allow any bubbles to break and the mixture to settle. Cool in the fridge for 6 hours, or overnight.
Red currant sauce. In a small pan add the red currants, apple, lemon juice, and water. Bring to a boil for 5 minutes. Strain the fruit and add 3 teaspoons of sugar to the sauce. Pour back into the pan and cook until it's reduced and then let it cool. You can also do this with raspberries.
