My son and I made these today and were thrilled with the results. They are fudgy and the texture is lovely as well. I’ll make these again.

I made this today -- I used only rolled oats (instead of a mix with quick-cooking oats) and chopped nuts instead of coconut. I found that I had to use 1.5 cups of oats instead of 1 cup in order to make it hold together, but when I did it was great!

I wonderr if this works well if you mash some medjool dates, peanut butter, mix in the oats, and then add any additional shredded coconut, dried fruit or other for texture

Applesauce is easy to make yourself. Just cook peeled, cored apple pieces in a saucepan with just enough water so the apples don't burn until soft then mash to make applesauce. You could also use more honey with a little bit of water instead of the applesauce.

@@Amougsus69 You're welcome. Pumpkin puree, cooked winter squash, cooked sweet potato or mashed banana are some things you can use as an applesauce substitute as well. If it's too dry add a spoon or 2 of water since some of those items are drier than applesauce.

I am going to make these for sure, in the past when I have made any of your recipes I’ve loved them. However, I count calories so I can only have one (152 calories each). I’m not good at self control so my fingers crossed that I don’t cheat and have more than one. Thanks for sharing the recipe.

And i would love to try them, but as a energy bar, they would be great to bring on longer hikes, compact and full of energy :) But anyone who says these are a good and healthy breakfast is out of their minds... 1 cookie around 50 grams ish for 152 calories, super high in fat and sugar, and the fiber in the oats are not enough to offset the insulin spike from the added sugar.
