I steamed them. But my wrappers were not soft, i should have made them thinner. I'll try again next time. Thank you.

thanks for all the nice recipes and ideas, Lucy! We made this, the jiaozi held together well in the pot, but the wrapping turned out to be chewy, a bit like mochi, but that's normal for gluten free food. Rolling them out was tough, but doable. My fam lived in China for a dozen years before a Celiac diagnosis, so we'll always compare these with the wheat jiaozi we remember, unfortunately. This recipe took over two hours from start to finish, so this may be the one time we make them. Still, we're happy we did it.

The critical part of this recipe is to mix tapioca starch and rice flour very evenly before pouring boiled water in. A lady posted a comment in Chinese mentioning the same issue 3 weeks ago. After reviewing the process, she re-did it following my instructions and got successful results! The dough was amazing and handled easily, just like wheat flour.

I added potato starch and lard, I also noticed the boiling time was different.

Hello Lucy, greetings from Costa Rica. A while ago I have been watching some of your videos and they are very good, I love your recipes. My husband has a condition called psoriasis, so he can't eat anything that contains dairy, gluten, or nightshade fruits and vegetables. We love oriental foods, we love dumplings, bao buns, dim sun etc etc, but I have the problem that I can't use all the ingredients mentioned above. so i would like to know if i can replace the mashed potatoes with something else like sweet potato, since potato belongs to the nightshade group of vegetables. The purpose of using mashed potatoes is to improve the hard texture of rice flour . I don't think corn starch can replace it. You can try buckwheat flour.
