In this recipe I didn't use any branded gluten free mixed flour, but used my own mix. I also didn't use any binders like xanthan gum and psyllium which typically are used in GF cooking. The dough was amazing! You can handle it like a wheat dough. I created a way to get this result. That was a milestone to me in GF cooking. Xanthan gum or psyllium is an option, not a requirement. I know some people don't like them, and neither do I.

Ingredients:
1. Dough
80g Tapioca starch
120g Water
100g Mashed sweet potato
20g Sugar
5g Yeast
120g Rice flour
2. Filling
Char siu
200g Pork shoulder
1tbsp GF Soy sauce
1/2tbsp GF Mushroom sauce
1/2tbsp GF Sweet soy sauce
1/2tbsp Cooking rice wine
1/2tbsp Balsamic vinegar
1/2tbsp Honey
20g Sugar
Ginger slices
Char siu sauce
80g Mashed sweet potato
1tbsp GF Mushroom sauce
1/2tbsp GF Soy sauce
1/2tbsp GF Sweet soy sauce
1/4tsp Salt
1/2tbsp Olive oil
