you can always replace some of the ingredients. That's what I do, and it doesn't make a lot of difference I guess.

in Vietnam it's a bit different. we wrap it by lotus leaf instead of cloth (boiling the leaf for a couple of minutes before). my mother usually boil vegetables in a minute or two, then cook with oil and add some stuff for taste. finally, add a bit coconut milk instead of water into the rice. next time, you may try Vietnamese style !!!

I don't even remember how I cam across your channel. The first video I watched was " How to make Bubble tea" We call that Boba in Cali. I'm pretty sure it's the same thing. But anyway I love your videos so much. I love cooking and baking. I worked in a kitchen for 3 months and I loved it. It was a summer camp so the food wasn't always as aesthetically pleasing as your food, but I learned a lot. Even though I am not vegan (although a lot of my friends are) and I don't enjoy very much of this type of food, your videos inspire me. The crisp audio in your videos make it so enjoyable. I love your music-less videos. I love hearing the food simmer, the veggies being chopped, the crinkling of the packaging. I love watching you cut your vegetables. The amount of finesse you have when you handle the knife is mesmerizing. Proper knife handling was the hardest thing to learn in the kitchen this past summer. But even in the first video I could see your passion for cooking. Needless, to say don't ever stop cooking or making videos. I appreciate what you do and that you share it with us. Thank you:)

Is it possible to use normal japanese rice or does it have to be "glutinous" and what is the machine where you put the rice before soaking?

This dish is best with glutinous rice because regular rice might get too mushy from all the steaming and I think the machine was a huller because the rice still had its husk.

I've watched some of these videos... I guessed early on that they were a form of ASMR. And I do enjoy them very much. But, will someone please get this accomplished cook some grownup-sized spatulas? It wastes time to be working harder than he has to with his two tiny spatulas. Stirring would sound just as mesmerizing, can be just as deliberate and conscious, but more efficient, with normal-sized ones. He's got so many kitchen machines and tools that are very advanced and highly specialized, meant to save time, some truly gourmet ones that I don't own. He's got special espresso machines, and a Vitamix, he roasts his own coffee, a food processor, small grinders and blenders, even a machine that hulls brown rice! But then there are those two spatulas... does he use them to focus himself and us? To be more aware of every small, deliberate motion, like a meditation? He could buy any sized spatulas he wants, but only uses two tiny ones that make it harder to scrape out a measuring cup or a bowl. I wonder why, since everything in his videos seem to be deliberate and planned.
