Dark soy sauce tastes completely different from light/regular soy sauce. It's often used for colour, but it also adds a hickory-like sweetness to the sauce. So: get more types of soy sauce! You'll be glad you did. (for total enthousiasts: every Asian country's soy sauce has a somewhat different flavor, so it's a rabbit hole you can get really lost in).

Hi Jeremy Sabrina from Philly. As a long time follower of YMC, and the Garlic chili Noodles, I will recreate the recipe as well with the noodles he uses as well as swapping out the oil. The type of noodle is a huge part of this dish and yes very hard to find. They are not always in stock and sometimes the size varies but a flatter noodle is what you want. Also, always go lighter on the goju when using it the first few times until you know how it reacts in the dish. I have all of the ingredients and will definitely report back. I have always cut the oil down but couldn’t figure out how to replace it. Thank you.

At large Asian stores I have been able to find noodles with no egg. I've also used sweet potatoe noodles. Like you, I tend to add alot of vegetables to the dish! I am curious to try his red chili oil recipe with aquafaba replacement to see whether it would work. :) I would be curious to see what you think of Pick up Limes or Gaz Oakley recipes. I'm a big fan of Yeung Man Cooking (in spite of the puns). I've tried a few of his recipes, all noodles or ramen, where all I had to sub out was the oil to saute (used water or broth) and his standard chili oil (used sambal olek mixed with water). I've learned about different kinds of noodles from him - my fave recipe so far has been his Quick Sweet Chili Noodles, which do have veggies in the form of Chinese chives, carrots, and long beans. It also calls for shimeji mushrooms, but I have substituted shitake or king oyster mushrooms, which are less expensive. I'm very fortunate to have a plethora of large Asian markets where I live, so I've been easily able to find anything he uses. Your video popped up in my feed and I had to see what your experience "WFPBing" his recipes was. I'll have to try that curry! Also, I second the suggestion of a reaction to Derek Sarno's recipes.

I can only say that you cannot compare rice noodles to those noodles the eating experience is significantly different in my opinion. If you ever find them you should try because they are so satisfying Also he does use a lot of oil which I cut back on but still include. What gets me more than the oil is the amount of sodium in his meals. I'm interested in trying the aquafaba as a swap when I cut back on oil in savory dishes.

I’d have been following Yeung Man for a few years and I think I made one or two or more of his recipes? My memory is not good but if the recipes when wrong I may remember that? So since I’d have been following for a few years I felt like I had to buy his book to be grateful. What I don’t like about is when you have to make a special spice sauce and if you don’t have it, then what? Besides his recipes I like how neat his videos are (I’m not neat 😂) and his tone that I can’t clearly define: humble and at the same time dandy? Hello from 🇯🇵, Shizuoka prefecture, Fujinomiya (living on the Mt Fuji slope) 😊 I think we can’t make the review of a recipe if we don’t do exactly as it is, the ingredients and exactly the way to cook, time, heat etc. so you are tasting a variation of another persons recipe. Anyway, the title of the video already says you’re not going to use oil… plus the question mark (that doesn’t appear on the screen on least you click on the ‘more’ so the title doesn’t totally say is doing his recipe exactly as it is 👍.

I am new to your channel, have you tried Sarah's Vegan Kitchen? Enjoying your content so much. I am probably 80% WFPB, and trying to work my way towards 100. Grateful for the ideas on swaps:)

I’d like to see you make some of Vegan Richa’s recipes. Her recipes always look good, but she uses oil in a lot of them.

Would LOVE if you could find a good replacement for chili oil. It’s my one thing!

I'd say if you like it for flavour just used it sparingly

Thank you, this was entertaining AND helpful. I love your side by side pictures. Yours look so much more realistic :). Thank you. Have you tried The Mediterranean Dish by Suzy Karadsheh? Could you do a review. It’s not vegan but a lot of recipes COULD BE maybe? It’s a best seller and I’ve always been curious. Thanks

KZbin channel The First Mess has fantastic recipes! The videos are short, but just go to her website for a complete ingredient list and instructions. Just made the Arugula Salad with charred sweet corn, nectarines, and spicy cashew dressing and added the optional baked tofu bits. It was delicious!
