Thank you so much! I have this book on Kindle, you have encouraged me to try more of the recipes. I was a bit worried that you wouldn't get back to doing cookbook reviews, that's my absolute favorite type of videos you make, while I do enjoy all of your channel. It was good to see "superb" instead of "suberb" at the top of the chart, that had been bothering me for a while! Don't forget to do one of Gaz Oakley's cookbooks at some point, he is different from all the rest in that he is an actual vegan chef. He has a Christmas themed book and a holidays themed book, so maybe something to try for the holidays?
@pbwithjeremy

Don't worry - the reviews are a staple here on the channel - at least for the forseeable future :) And yes - finally fixed that typo :) Something's in the works for Gaz's content. :)

I think the custard, if you make the slurry ahead of time, you need to stir it before you pour it in and the corn starch in the UK might be different than here, if it doesn't thicken make more slurry and use more corn starch next time you make it.
@pbwithjeremy
@pbwithjeremy 29 күн бұрын
The thickening wasn't the problem so much as it just didn't add any flavour

My biggest problem with many vegan recipes/cookbooks is the lack of seasoning or adequate sauce. It's all about the flavor. I wonder sometimes who actually tested the recipes and what kind of palate they have. After realizing that, I started automatically doubling or even tripling the spice/herbs/sauce ingredients for most recipes. These days, I look to recipes more for a framework and always continue to taste along the way to see if something needs to be added, be it more spice or acid or just salt and pepper. I am encouraged to see that more vegan cooks/cookbooks are really putting the flavor profile front and center and emphasizing that instead of just saying that something is plant-based and very healthy, so that should be enough. It's not enough for most people in the long term. It has been interesting to see your family's journey and how everyone's cooking skills and palates have evolved.
@earthling-ad
@earthling-ad 29 күн бұрын
I think they've forgotten to double up on some of the ingredients. Jeremy says at the beginning of the video that some of them are for 2 people, but then proceeds to put a very small amount of soy sauce in the yaki soba. I've generally found bosh! recipes to be pretty good. The other thing is that cooking with oil is not just about preventing food from sticking to the pan, fat helps to enhance flavours and so if you are removing it from a recipe you are going to have to find other ways to pack in more flavour, so you would naturally need more herbs and spices than in the original recipe when not using oil.
@pbwithjeremy
@pbwithjeremy 29 күн бұрын
Sometimes in the recipe making I don't show every single step - I'm pretty good about doubling properly, etc.....

I had never heard of these guys so thank you for introducing us to them. The burger texture didn’t look right to me so if I make them then I would leave the beans whole or maybe mash them to help with some structure…..just a thought. The custard looked like it needed more cornstarch to help it thicken and possibly more vanilla and maple. Never heard of a Tim bit haha it must be a Canadian thing but it sounds naughty, we Tim Tams here and they are naughty too.

The main problem I see with milk makers is that for many ‘day to day’ vegans the vitamins and minerals in commercial milks are essential.

If you're relying on plant-based milks that fortify their products to give you your vitamins then you need to eat more vegetables and healthy fats. That's not a problem with milk makers, that's a problem with the balance in your diet.
