I made your bread with 100% Whole Wheat Flour. It turned-out so very well. It is a wonderful texture. As you know, WWFlour has less gluten than white flour, so I did the Stretch&Fold 1 extra time. It seemed to be needed. Thanks 🙏 ❤️ 🖖

I have been making this bread about 3 times now. I only see this now that I was supposed to take the lid off with the last 12 minutes. I didn't have the high crust as it was squashed by the lid. It came out beautiful anyway. Thank you. My husband says it looks like store bought rustic.

Thank you for this video! I am still very new to bread making but got started in 2020 when the world seemed to fall apart and things weren't very easy to just go out and buy, bread being one of the main items that just wasnt ever available in my area. I learned the basics for making some simple breads but I always missed the more rustic breads, which never returned to bakery and store shelves. As such, I'm making more bread at home. This video looks exactly like my favorite bread that hasnt been available since early 2020. I'm giving it a try right now. Thanks again for the wonderful video.

by the time i woke up, the preferment had become what you described - collapsed and bubbled on top. however, since it sat for 11.5 hrs in an oven (off) overnight, the bread still turn out well. the holes inside after baking weren't as large as those in the video but still chewy, airy and crunchy. will definitely be experimenting with prefermentation time and room temperatures. this resulted in the best rustic bread i've made to date, thanks for the recipe!

Very nice technique. They do something similar in pizza doughs. After 3-4 hrs enzymes activity peaks converting starches to sugars but also weakening gluten network. This gives very nice extensible dough that can hold more gases without compromising its structure. I did it leaving 11 hours to ferment. I got sticky dough which couldnt hold its shape. I did several coil folds at 45 and 90 minutes. I finally got a stronger dough. It ovenspringed beatifully and gave me regular open crumb. The crust was very brown due to the sugars. Very nice loaf and very forgiving recipe. Thanks a lot.

This is the best recipe for bread. I've tried so many but this beats them all. It's my daily bread. I saw your recipe to make pizza using a cast iron skillet and plan to try using this recipe to create a napolitan style type pizza with your cast iron suggestion.
