I used to watch my Mom cook this and didn't realize how much work it was esp. when she cooked it for Dad's birthday party for 30+ guests.However her recipe alternated slices of pork with slices of bamboo shoot and slices of fried egg and smothered with a sauce on a bed of lettuce. Beats the heck out of the greens. She also cooked bird nest soup,egg foo yung,fish stuffed black bean bell pepper, almond chicken and fried spare riblet with pineapples and bell pepper and bot Jom chicken with scallion and ginger dipping sauce. I don't know how she did this by herself. Now I know why she was so grumpy when Dad's birthday was near. LOL!!
