Better idea for tomato paste - freeze in 1 tablespoon portions using an ice cube tray then put in a freezer bag. You can still store it flat if you arrange the cubes in 1 layer.

Or just put the paste on a piece of parchment or wax paper in tablespoons, freeze them on a baking sheet. Once solid roll up the paper with the spoons of paste rolled to the inside and put the whole batch in a zipper bag to store. Simply remove one dollop at a time as needed.

Here’s another tip to go along with the tomato paste idea. Put the flattened bag of paste on a tray. With a ruler or something similar, press lines horizontally and vertically to make squares. Then put the tray into the freezer until the paste is frozen. Recipes sometimes call for only a tablespoon or two of paste, so all you need to do is break off a square. I use the same storage method when I shred a large quantity of ginger root. You usually do not need to use a lot of ginger root to flavor a dish, so you can make the squares even smaller.

Just found you. Oh my gosh. I love love love this. Told three of my friends and they are going crazy about you also. I have always been insecure in the kitchen and thot to much work. Not anymore!!! I love the way you go from one subject to another!! Slow and steady but and not taking 15 minutes of explanation of the “why”. That is why I never watch a kitchen show plus they all have fancy pots blah blah. Please don’t go away

I keep citric acid in my kitchen because I can't always get lemons when I need them and can't get to the store. It works just like lemon juice.

The best way I’ve found to keep avocados and avocado salad fresh for a longer time is by keeping the avocado pit inside the avocado half or just throw a couple pits inside the salad until it’s time to consume it

You could boil the scraps, and then use the broth for gravy while you put the cooked scraps on the compost. If you have chickens, they will eat most of the cooked scraps ( no salt, onion, or garlic for chickens). Just a thought.

The bell pepper cutting open makes sense - and American Test Kitchen needs to learn this - and do this ! Will be learning them up about this method, and many other pepper-using cooks, and do it the right way. Can still make pepper strips for stir frying etc.

I have always stored avocado halfs with a light brush of oil. I know lemon works a bit better but it seems I never have a lemon when I need one!

Bottled lemon juice has a very long shelf life (6 - 12 months) if it is refrigerated after opening. It's not as nice a flavor as fresh, but certainly good enough for this kind of use. It could also be used on cut apples or other fruit that may oxidize.

Tks again for your tips! I put a bit of lemon juice in a container and put more juice on the Avocado half and turn upside down onto the juice in the container and put lid on. Keeps perfect for 3 days! I however would not use aluminum foil to bake anything in.. 🧑🏻‍🦰🇨🇦

I have found avocado keeps better covered in clingwrap, and then covered in alfoil to keep out the light. Make sure the alfoil is lightly pressed into the hollow. i have kept it for 2 weeks like this.

So, I get pre-slicing the butter, but that takes way more time and equipment (parchment) than is necessary as opposed to keeping it on the counter and slicing as you need. Avocado coated in either lemon or lime juice works best. Why do you cut off the stems of the broccoli? I prefer the stems personally, and besides, why would you waste perfectly good broccoli just because it's not the fleurettes? It all tastes the same. BTW, don't discard the greens on cauliflower either. The greens taste exactly like the white bits. As for the scrap broth, YES! But I would suggest that you only wash and don't peel carrots, potatoes, yams, or Ube (purple yams ... NEVER peel these!). Most of the nutrients are in the skins or just below and if you peel, then you're removing everything that is nutritionally good about these root veggies! Sure, your stock will have more, but you'll lose the benefits in your meal.

Thanks. I'm not sure what you're referring to, so I will cover them all. Butter does not need to be refrigerated as folks in the US believe. Lemon or lime on avocado prevents the oxidation that happens to avocado that's exposed to air. BTW, even if some of it is black, you can scrape it off or still eat it. It's perfectly fine. It's oxidation, not that it's spoiled. And even if it's "spoiled", for most veggies you can cut off the bad bits and use the rest. Americans are un-educated in this. Folks in Europe that shop at farmers markets know that if there's a black, moldy spot on an otherwise great tomato you want, you can just cut it off, like you can with cheese. Broccoli stems are still broccoli and taste the same as the florets. Same with the greens you get with cauliflower. There is NO difference in taste between the greens that folks normally cut off and throw away and the white bits. You can actually eat it ALL in it's entirety without wasting the green bits. The only thing you'll want to toss is the dry bit at the stem, but you only have to cut off about 1/4 to 1/2 inch. EVERYTHING else is edible and tastes the same. Americans are snowflakes in regard to food.

sprinkling pepper over the cut side of avocado and pumpkin works beautifully in preserving them in the fridge. Pepper probably works with other veg, too, in inhibiting oxidation

Keep the pit in the half of avocado you need to save. Add a little lemon juice around the edges. The pit is the secret! 😊
