Love the vid and very good effort. The pasta was bland was because you did not add enough salt to the water cooking the pasta. As they always say needs to taste like seawater. As for cooking time, usually, the packaging will indicate the time to cook the pasta. For me, I will calculate the time needed to sweat the garlic and chili flakes, for example, 5 mins. So if the pasta takes 10 mins to cook, at the 5min mark of the kitchen timer, I will start the frying of the garlic and chili flakes. Cook more and you will have experience in time management. 😁

Please do not use chinese parsley. It's cilantro which is stronger. If you really can't find italian parsley, Chinese celery is a decent alternative to it taste wise. When done properly, you also do not need to add salt. Always salt your water to 1% salinity so let's say in a liter of water, use 10grams of salt. The pasta should be well seasoned and the pasta water will give you the additional salt which you may need for emulsification.

As a home cook, I agree with you. And that what you said is so fundamental in pastas. You don’t need extra seasoning, just only from the emulsification where the salt has been uniformly dissolved. And the well seasoned pasta water should have the right amount to season the pasta as it is boiling. Most of their videos are just for entertainment but their cooking is v basic.

Honestly feel if you want to make a good aglio olio, it’s always good to get the proper ingredients. There is really a big difference when you use Italian parsley when you cook aglio olio. Agree with Wilson on this

If you’re using Chinese parsley, Chinese egg noodle is a decent alternative to pasta cultural wise.

"you put cheese in your aglio olio?!!?!?" Wdym you're supposed to add parmigiano reggiano.
@wilsonl39112 жыл бұрын
Not traditionally. Since this is supposed to be a poor man's pasta and cheese was for the middle class and above. Toasted breadcrumbs were used instead. Nowadays in 2022, meh add it if you want.
