Just made this for dinner with spaghetti squash instead of pasta for the noodles and it is DELICIOUS. Presentation-wise ours looks terrible but the flavor of the vegetables was absolutely heavenly. Tomorrow, we are going to try it out with pasta noodles instead. Thank you for adding the recipe in your descriptions. Made it so much easier to access while watching your video and cooking.

lay ho ma! Italian here :) may I just say, differently from asian noodles, any pasta is usually cooked so that it's done cooking when the sauce is done cooking as well, you don't "leave it aside", this way it does not get cold, stick to it self and, for example, the spaghetti do not break when you handle them. just a tip :)

This dish looks scrumptious. One of these days I’ll actually manage to open a jar of capers. I couldn’t even open them BEFORE arthritis messed with my hands. And yes, I’ve tried numerous methods of opening the tiny jars.

I have found Good Grips utensils to be a lifesaver. They are designed for hands that have lost strength due to infirmity or injury. I hope you can find them where you are.

You can pop or break the vacuum seal of the caper lid with a can opener, then it's easy to unscrew the top.

My favorite method for opening a jar of anything hard is to go outside and stop the first guy I see and Sweet Ole Lady (formerly, Sexy Young Girl) that I am, ask the favor. This way I have met all of my neighbors on both sides of the street and because of me, they've met each other.

Capers can be a bit of a hit and miss at first. They were with me. They seem sorta like a small olive (but not) preserved in a salt brine. Personally I love them crushed up in pasta sauce rather than whole.

They are preserved in salt, salt and water, or salt and vinegar.

They preserve in the brine that came along, if You weather it's about 20-25°C, you can keep it in the counter ir a cupboard, if it is hotter in the frigde. But they preserve very well bye themselfs. First Buy a small jar, to know if You like it then if You do, You can Buy biggers jars. I love them and Buy 1L jar, they last almost a year for me

@@squarz HA! No one in my Sicilian family would dare to 'set' the pasta aside directly after draining. We allow the sauce to be cooler and marry the two immediately after they have drained. I have to say, I have never let the pasta sit in a bowl till it cooled to watch it break, it could be fun!

do you tend to remove skins from chickpeas? Or does it not make any difference in recipes

Hi! The only recipes I’ve encountered which call for chickpeas with the skins removed are hummus recipes, to maximize the smoothness. In almost all other dishes, chickpea skins are undetectable and not a problem :) just my two cents as someone who cooks a lot of chickpeas!
