Ingredients
500 g skinless and boneless chicken thighs
2 tablespoons oil
1 onion
1 garlic clove
1 stick of celery
100 g smoked pancetta or rashers of smoked bacon
100 mls white wine
1 x 400 g tin chopped tomatoes
1 tablespoon tomato puree
1 teaspoon sugar
150 mls chicken stock
2 bay leaves
Salt and Pepper
2 stalks fresh rosemary
1 x 400 g tin cannellini beans or chick peas
Method
1. Heat one tablespoon of the oil in a non stick frying pan cook the chicken until slightly golden. Then add the sliced bacon.
2. Peel the onion and chop finely.
3. De-string the celery and chop into small pieces.
4. Chop or crush the garlic
5. Heat the remaining oil in the large sauté pan and fry the onion and celery until slightly soft.
6. Now add all of the wine until it has reduced to a syrup.
7. Transfer your chicken and bacon to the saute pan
8. Add the tomatoes, tomato puree, sugar, chicken stock, salt and pepper and bring to a simmer. Cook for approximately 10 minutes.
9. Strip the rosemary leaves from the stalks and chop finely. Add to the pan with the bay leaves and continue to cook for a further 10 minutes until the chicken and vegetables are tender and the sauce is thickened.
10. Finally add the drained cannellini beans and warm through.
11. Serve with crusty bread.
