Okay, I'm about to put you on some game. I was a cook for 10 plus years, and I worked a sushi and asian restuartant (two different places) for about a year each. The Wok is NO JOKE! That fire that he was cooking on is between 700-900 degrees. That towel is so he won't burn his hand. A wok is like if a cast iron skillet and a grill had a baby. Most dish takes no more than 3 mins to cook in a wok. Now depending on the meat it can be raw to fully cooked, going into that wok. Since he put it in at the end it's more than likely fully cooked. Raw or partly cooked meat are one of the first things but in the wok. By the way it looks it's could be just salt. Most restuartants like this don't carry MSG do to the scare. But GMO and MSG are NOT the same. MSG is not harmful, it is just another seasoning. I know you joking and I love your videos. But careful about jokes like that an average person don't the difference and it just not helping anyone out. But overall love your stuff. I would love to answer any other question you may have.

So the powder was a salt, white pepper, msg and sometimes they put sugar, that helps to balance out the flavors and salt levels. Also the liquid he used was seasoned oil. It's old they separate after they fly onions, scallion, chicken or peppers and use it to cook the fried rice

I went to school with a kid, his family owned a Chinese restaurant, I learned a ton of cooking and stirring methods. Most food is prepped and ready to reheat and blend flavors. It's impressive the amount of food the restaurant could throw together and get it out the door into customer's hands in short time.

You should watch more stir fried rice videos. It will take the mystery right out of wok cooking. Right wok, wok spatula, rice cooked the day before, advanced prepping ingredients, and gas stove. I have not bought Asian food in years after learning how. Best decision ever. Experiment with different ingredients, (make your own egg rolls and wontons) tempura, oyster, soy and hoisin sauce, sesame oil, spices, all give so much customization/variety and much less expensive than takeout or delivery. I stir fry so often that I now have four woks; cast iron, stainless steel, and carbon steel. Home cooking is the best.

My husband was the only person I ever met that cooking a complete meal together was an adventure and we liked most of the same foods. I have been to people's house and knew right away what type of cook they were just looking at the spices. Only four bottles, including salt, pepper, and I gotta go home. I can't do that bland and boring culture.

MSG is a salt made from glutamic acid. In cooking it works similarly to salt in that it stimulates salivation. MSG is more complex flavor enhancer in that by activating the glutamate receptors on your tongue, the brain then fires all kinds signals to the mouth, enhancing the flavor of whatever it is you're eating, minus the sodium content of sodium chloride. Personally, I think it makes everything taste like mushrooms. It works in chinese food but I like it when it stays in Chinese food. Regular salt on everything else, k thanks.

FYI - they come in earlier than the actual hours to open and do food prep & particularly precooking certain proteins ahead of time. This is a staple process utilized by most all Asian regions that are accustomed in preparing street food. They have adopted this along with techniques while in a restaurant setting in order to get the food to the customers very quickly.

Someone like that is a veteran cook. He knows just how to cook and measure every ingredient without a measuring spoon or anything else. I guess I should be surprised, but I have seen these people cook all the time downtown in China. They do mean business! 😅

I need egg, bean sprouts, scallions in my fried rice and it should be brownish in color... the peas, carrots, and onion chunks with some yellow rice is not the way...
