I love your Cooking tips and recipe. You make cooking seem a lot easier. In Anambra where I come from, we don't add onions while cooking meat for soups like this Nsala, Onugbu (bitter leaf) and Oha. We use ogili-igbo for these soups.

Ogili Igbo is a must for Nsala soup. That is how we cook it in Anambra State where it originated from. Some use ogili okpei. Onions is optional and in a little quantity just to season the meat or fresh fish.

This soup is cooked with catfish. That's what gives it the unique Nsala taste. I will most def try it with the goat thou.

Nice and fresh spin on the thickening however, there's no place for onion in the traditional recipe EVEN in cooking the meat...it's salt, seasoning cubes and pepper. Not everyone likes the taste of okpei (it's an acquired taste) but it's a MUST in the traditional recipe as well. You also skipped the the uziza seed which gives a unique taste and aroma which it comes in unison with the okpei.
