Well this looks like a disaster! But it tastes amazing!
I was attempting a chocolate cake with 2 different Icing! I made some huge mistakes but the flavor is spot on!
Moist Chocolate Cake
2 c ap flour
2 c sugar
2 tsp baking soda
1 tsp baking powder
3/4 c cocoa
pinch of salt
1 cup oil (I used 1/2 c butter & 1/2 c oil)
2 eggs
1 tsp vanilla
1 cup milk
1 cup strong Brewed coffee
preheat oven to 325°. Pour batter into 2
9in pans. Bake for 30 minutes.
(I used 8in pans so I baked on 350°)
Icing
2 sticks salted butter
4 cups powdered sugar
a few scoops of Raspberry preserves
a handful of fresh raspberries
this with heavy cream
*for chocolate raspberry Icing add 1/3 cup cocoa

That was so funny. I was really confused when you sliced the cake in half like that but the comedic value when it slid apart and Bryant had to show us, was worth it! 😂😮😅😂 I am trying to stop laughing, but having a hard time.!!! That was so funny when pb brought the cake out. I laughed out loud, here all by myself. Thank you for this video. It is encouraging to see that we all have struggles with our bakes sometimes. Just in appearance alone I would have gone for the vanilla frosting with the raspberry preserves in it along with some fresh raspberries. I'll bet the raspberry flavor came through much better with the vanilla butter cream. Yum.

Oh my, you’re such a doll for sharing your life as a ‘work in progress’ as we’re all in this together my friend! I see that you’ve had a lot of really great suggestion and though I’ve not read them all, let me tell you my observation if that’s ok? It wasn’t that you added too much cream to your frosting(in my opinion) it was actually too many fresh berries. The juice broke from the fat in the butter. This is why bakers will always use either preserves or freeze dried fruit in frostings. That’s my ‘two cents but still, I’m very proud of you for your efforts and for sharing! Well done! I’m going to use that cake recipe for sure! Xoxo❤🇨🇦❤

When I was growing up, EVERY dessert my mother made was served with the caveat, “Now this is one of those desserts that doesn’t look good, but it tastes really good.” We didn’t care, ate it up! Now I make cakes for a second job! So a few tips for you: (1) I usually make the cake one day and frost/decorate it the next. Even when you think the cake has cooled enough, it’s still very fragile and can easily break apart when you pick up a layer. (2) When you make buttercream, let the butter/sugar mixture beat for at least 5 minutes before adding any additional liquid. It always looks like it will never come together, but always does. Often, you won’t even need to add any milk. (3) Caution on adding fresh fruit to your buttercream. The cut up fruit attracts the sugar which separates it from the butter/sugar mix. You end up with little chunks of butter when the frosting “breaks.” It’s better to just put the fruit on top as part of the decoration. Less “breakage!” I think you did a great job because you made an obviously delicious cake! But I don’t think you solved your dilemma of which works best on the cake, since they were both apparently delish!

Leslie I'm over here in another part of NC talking to You like you can hear me lol I make cakes and I'm over here trying to help but I can't 😂 You dont want to frost a warm cake unless a recipe says so. I've find that you can ice a cake better if it is frozen. I might would have went seedless with raspberry jam that's just me And I use water instead of cream because if you use cream you will need to keep it in the fridge. I bet that chocolate icing was so good. I also flip my cake to the even side unless you want to cut the top of the cake even which I'm not good at. You Live and Learn.

Hey, Leslie, the cake looked really delicious. I know you probably already know this, but always leave your cake together to ice it and you can freeze it to keep the crumbs down, put on a thin layer of icing and let it dry, then spread the icing on the cake. Also, a glass of very hot water can be used to smooth out your icing if you want it smooth. Anyway, I feel strange sharing this with you, because you’re the one with the cooking videos and I’m not a professional by any means. Your vids are always so warm and inviting to join in sharing the joys of your life. Love you and happy cooking!

Hey if your frosting sets up is somewhat stiff, you can lay a paper towel against and gently smooooth it out by rubbing lightly and gently removing the towel

I do not know anything about decorating cakes, but I certainly enjoyed your episode. I would cut one cake horizontal and make it a two layer cake and take the other cake horizontal and make it a two layer cake and not cut it vertically.

I would use raspberry preserves between the layers of a chocolste cake with chocolste icing and use fresh raspberies on top to decorate the cake.💕💞💖

So funny that you mention the Brachs candy with the fruit flavorings in the middle. I always love the orange in the lemon those were my favorites. And then I think Whitman’s chocolate also had the same thing. So I know exactly where you’re coming from. Your little boo-boos created a wonderful experience, and this is how we learn :-)😂

I use disposable plastic straws to keep my cake layers from sliding sideways. I push the straw in till it hits the plate, pull it up a little and then snip it off. Then you push it back down with the piece of straw so it's not sticking out. They look delicious!

🤣🤣🤣😂 Oh my gosh, that reminds me of the time a made a 2 layer cake and when I went back in the kitchen later the top layer had slid off the bottom and was smashed against the cake dish cover. What a mess!! But hey, the saying is it ain't what it looks like, it's how it tastes that counts!

Hi Leslie! That wasn’t really an epic failure. It was a lesson learned in not what to do next time. My suggestion is put the chocolate frosting in the middle of the cake. So take the first cake round, place the chocolate frosting on it and layer the second cake on it and put the Raspberry frosting on top and all around. That is what I would do. Just a suggestion. Thank you for another great video my friend!

No matter what it looked like I could imagine it tasting fantastic! I'm glad you showed how things don't always come out the way we envision it! If you want to do both icings together another time you could just use chocolate between the layers and the top & sides with the prettier vanilla. You could also just make a raspberry glaze for the middle. One tip my Aunt told me when teaching me how to decorate cakes (almost 50 years ago, long before modern things like fondant) was to freeze your cake before decorating. This helps provide structure, hold in moisture and keep crumbs from lifting off when icing it. Just a couple of ideas...

You could put the chocolate frosting in between the layers. Then ice the outside of the cake with the vanilla frosting. The best of both. I have made this type of cake and instead of vanilla in the cake use raspberry flavoring. This helps to give the chocolate cake that raspberry flavor.

Hi Leslie. I think the chocolate raspberry frosting is a little bitter because the unsweetened cocoa powder needs a bit more powdered sugar than you used for the vanilla raspberry frosting. I love that you took us along during your experiment! Great way for teaching people real life cooking. My choice would be the vanilla raspberry frosting with mini chocolate chips folded into it or drizzled with a chocolate ganache. Love the contrast of the deep brown cake with the pink frosting but can't have too much chocolate!

Yummm!! I would like to try both but like I said the other day the chocolate would be my favorite. One time my homemade carrot cake would not stay together so I made it into a punch bowl cake or some folks call it a trifle. It was a hit!!

I think I like the pink better. You could add chocolate chips to the icing to kind of connect the raspberry to the chocolate. And I know what you mean about the Brands chocolates, now I look for Russell Drivers raspberry or orange.

My husband would love this one! He likes to pour milk on his cakes and when they crumble, he loves them even more!!! Good Job. As a former cake decorator, here's a tip: Make a plain white icing 1 C powdered sugar, 1 TBspn butter,, with just enough water to make it smooth. Spread it over the cake and let it dry for half an hour. Now put on your pretty frosting or tasty one. The crumbs will not bleed through. It's called an "undercoat.". The flavor's are wonderful.

This cake also looks delicious. I noticed that this chocolate cake recipe differs from the last chocolate cake recipe you posted. Also the last recipe only had 1/2 c oil. It turned out really good but will try it wil 1 cup oil next time.

Yeah, good job all around, I was so glad to see you make a cake, I was afraid it was gonna be another boxed mix, yuck. So, what I do is make a layer of the rasberries on top of the buttercream on top of the cake then spoon some rasberry jelly on top only in the middle layer, then on top, just put the rasberries on top of the icing to make it pretty and yummy. But its all good, I was one of those people screaming no, dont cut the cake in half, lol. You are funny. Make cake pops with the rest of the cake!

Hi Leslie, Yum! oh, this recipe brings back memories. Many years ago I was a baker for my sister's restaurant. I made a cake called Minnesota Chocolate Cake. I would frost the cake with standard Chocolate Butter Cream Frosting and put crushed Reeses Peanut Butter Cups in between the layers. It was a big hit! 😋It has less sugar and oil. It's very moist and delicious. 2 cups AP flour, 1 & 3/4 cups white sugar, 1/2 c Hershey's baking cocoa, 1 Tablespoon baking soda, 1 c buttermilk, 1 c brewed coffee, 2/3 c vegetable oil, 2 eggs, 1 tsp vanilla. Mix all the dry in a bowl, and add all the wet. Beat well for 2 minutes. The batter will be thin. Pour into 2 greased and floured 9" baking pans or for a sheet cake, a 9x13 pan. Preheat oven and bake at 350 for up to 30 minutes or until a toothpick inserted in the center comes out clean. Cool cake in pans on racks for 10 minutes then invert. Cool completely on racks then frost as desired. Tip: Use parchment on the bottom of the layer pans that way you are assured of easier removal. 😉 The unfrosted layers freeze well.

Professional bakers tip for next time - look for freeze dried raspberries at the grocery store (probably where the dried fruit is). Crush up the berries, use that to flavor your baked goods and/or frosting. Powders add flavor without adding moisture or liquid that can ruin the texture of your baked goods etc. Also, a little goes a long way with flavorings. Taste as you go

Too funny! Since you already cut the cake in half (hahaha) you could have placed the top layer with the cut edges crossing over the bottom cut edges. I have a KitchenAid 9-speed hand mixer and the low speed is really low. Chuck that one. I have seen others shows that use a Cuisinart and have the same problem.

My grandmother made the chocolate cake adding a bit of instant coffee, then filled each layer with raspberry jam, then iced it with vanilla frosting, and would add the whole raspberries on the top. It was delicious. She also did this with strawberries. And another with peaches.

You just need to invite a few friends over, put that cake in the middle of the table, give everyone a fork and you have fellowship! 😋🥰🤩

Next time poke holes in the cake, add the raspberry preserves and let that some into the cake. You wouldn’t even have to poke the holes all the way through to the bottom, just an 1/8 or 1/4 “ down, and then ice it….maybe.

Awesome video, Leslie! You and Pastor Bryant made me laugh at the end when he brought out the cake lol It’s never a fail when it tastes delicious! I was really curious when you cut the cake in half, I thought it was a very clever idea that I had never heard of! That was great that you made both the icings, Leslie!
