Just got to your channel and saw your beautiful new haircut, really suits you! BTW I lived abroad from Scotland where I come from, I went into a building and I saw a girl and I just knew we'd met before but neither of us knew where. We talked about all of the local places we'd gone to, school etc.. We hadn't met before but we were both photographic models for the same photographer! What are the odds - she'd seen my photo and I'd seen hers! Hope I haven't written too off piste just another odd story It was 50 years ago and I'm now 73.........I love your recipes and all of the things I'm learning from you - thank you for all of them x

We do need our essential fatty acids, but here I'd use either or because calories love to cling to me, and without a gallbladder fat gives me digestive issues. I had a bunch of basil ready to harvest, so I made a hybrid pesto/hummus recently using a can of butter beans, the basil, lemon, and hemp hearts for fat and omega 3's. Good stuff.

@llyingrid Very welcome! Any kind of white beans will work, or even frozen green peas, but butterbeans are my favorite, just blend really well. 2 cloves garlic 1 cup cashews 2 avocados Fill to brim with basil Juice of 1/2 lemon 2 Tbs Nooch Salt to taste (~1tsp) Blend the food processor to combine

I made this last night and put it on some red lentil pasta, it was delicious. My proportion of basil wasn't as big as I didn't have much but it was still very tasty. Love the addition of the avocado, which gives it a beautiful creaminess. Will also be great as a dip. Thanks Chelsea, I've been following you for years and love all your work.

I do something similar with equal parts avocado, edamame and peas and I add lemon and miso and whatever spices. Lower in fat and higher in protein. Pretty good.

This is really similar to a pasta sauce I make. I add almond milk and garlic with less avocado and basil, but still very similar. I put it on pasta with a ton of broccoli.

I make something similar to mix with pasta occasionally, and sometimes I use a little bit of silken tofu. I also love to add a giant blob of white miso, really takes it over the edge!

I have a 2 degrees NZ story! Our family left NZ in 1988 when I was 12. About 10 years ago, an NZ lady came to preach at the church in Canada that my husband and I were going to. You can use a half can of cannelini beans instead of nuts, I dont know what seeds you have problems with but use some you don't have trouble with eg: ½cup of pumpkin seeds/sunflower seeds, or hemp hearts

Yeah I get that oil is pretty much empty calories and that avocado and nuts are way more nutritious however even if this recipe serves 12 - which wouldn’t appear that generous with the amount it makes - that’s 175 calories and 14 grams of fat in one serving! Given that people following you are trying to lose weight, not gain muscle like you are now I just think it’s a bit over the top and it’s so delicious people would find it very hard to limit the amount they ate. I just compared your recipe to a classic olive oil and Parmesan one and yours actually has more fat per serving! So you can’t really call it a lower calorie pesto. There are healthier pesto recipes with way less fat; you could use half the nuts and replace an avocado with aquafaba for eg. Just my two cents Chelsea, I love your sensible advice generally but this one seems a little odd to me. 🙏❤️
