Suggestion I have. Go to a Lowe’s or Home Depot buy a piece of expanded metal for $12 and attach it to the bottom side of the coal rack. The expanded metal has smaller opening and the coals won’t fall through as much.

Put a piece of expanded metal on top the grate in it's proper position. Works great

I’m looking into a brazos. I would get another grate and run it the opposite way which would create a smaller gap for the coals to fall through

Great tips, going to that set up on my next cool…..I have a question though…I’m finding the Brazos funnels all the heat under the food and comes up to the top of the chamber close to the stack end because of that baffle, is there a set up where you can direct the heat to the top of the chamber quicker ? Basically turning it into a top down smoker instead of a bottom up ?

Thanks. I have moved away the baffle plate and moved to tuning plates. I did another video showing those. Also, try it without the baffle and see what results you get. A lot of people set it up as delivered and have amazing results,

Can you use the original metal charcoal/wood tray (grate) that comes with the Brazos as a tuning plate in the inside of the pit ? If so, how far apart do you set it from the vent in the pit of your smoker?

I used to. I ended up buying tuning plates. I just posted a video about setting them up. When I was using the charcoal grate I had it pushed up right next to the firebox shield.

@@JC-qk8dh ahh, I wasn’t tracking. So I take the food grate out and put the charcoal grate on the bottom and push it up against the right side of the chamber. It will be above the hole for the firebox. Does that make sense?

Well, I’m Dutch, so everything seems too expensive. You won’t find a smoker with 1/4 steel close to this price. I’ve had cheaper offsets and they rust so fast. It retains heat really well and draws the smoke good. I would say it’s worth the price. People love their Pecos too. It’s a hard call.

Same here. I built a UDS several years ago and it has been a champ. But I can't shake the desire to get a Brazos lately. Plus there's a feed store up the street that sells local oak, pecan, and sometimes post oak.

@@zachary9009 You're not going to find another offset of that quality for any cheaper. Once you get used to an offset smoker, the quality of BBQ is far better than a drum
