Hi Geoff, I hope you’re well?……your little cakes look delicious, I love it when something is made with a different method, I’ve never done a cake of this style this way either…….Your Queen Cakes have brought back fond memories for me today, my mum used to make these for me when I was young and whenever my dad ever saw me or answered my phone call etc, he would always, always say "Hello Queen", neither of them are with me now 😔 so thank you Geoff, for a lovely recipe and bringing back happy memories of my childhood……love Jan xx

My mother made these all the time her favourite quick CAKES to do... I have all her old pans which actually were my grannies also they are great tins never stick... I'm DEFINITELY making some of THESE.... for a lovely walk. Down memory lane... I can see my DAD pinching one out the tin everytime he passed through our kitchen great memories.... HOW'S your weather GEOFF ITS SO MILD IN DEVON BUT HORRENDOUS STORMS... Hi Henritetta. I am glad these took you for a nice walk down memory lane. The weather here has been mild and very windy today. Just a little rain, so far. At least the mild weather means a little saving on the heating bills.

It really makes no difference to us through the winter months with heating... the log burner in our cottage is on constantly because cob wall have to be kept dry especially when it's damp weather.. So we are all snuggled up till April at least... Neil would light the fire all year round if he had it his way he's a bit of a piromaniact... And he's always out in the garden chopping logs... oh well little things as they say 😂😂😂

My lovely Nan used to make fruit fairy cakes like these. She also used to make icing out of icibg sugar and lemon juice, which gave it a nice, tangy flavour.

They look really lovely ,I’ve been wondering what I could make to take to the Church’s picnic ,and these I,m sure will be a winner ,thank you very much . I used to have Mrs Beatons cookbook but I,m afraid the spine came off and pages fell out and it was binned . I used to think she was an elderly lady but in in fact she was only 28 years old when she died in 1865 .

Happy New Year, Geoff! Another wonderful video. The mixing method is the reverse creaming method - which is supposed to reduce gluten development so you end up with a more tender crumb.

Great video, THANK YOU! If you like to use those little molds, the Italians make little cakes like that called Bocconoti. It's a sweet dough pressed into the molds then you can use a tablespoon or so of Nutella for the filling......or there are other chocolate variations for the filling, then top the Nutella with the same dough (double-crust). You can watch other Italian cooks and pastry chefs making our beloved Bocconoti. I like your dried fruit version, Jeff, THANK YOU! (Dust with powdered sugar before eating!)

Hi Geoff, Happy New Year! I missed you 🤗. Gosh, I still make these regularly, as did my own mother. Always delish! I notice you switched between baking soda and baking powder. I assume it’s powder, but not sure. What about doing weights in the video and volumes as a written alternative. It would be less confusing. Just a thought! Take care, Geoff x

Hi Mary. Happy New Year to you too. I did say when listing the ingredients baking soda. Then when adding it into the mixture I said baking powder, but I put some text on the screen to confirm it was baking soda. Sorry for the confusion. I do metric weights in the video and cup volumes. The reason for the cup volumes is that most people in the USA work in cups. If they have a digital scale so could use weights instead they can switch to grams on the scale and use the metric measurements.

Hi Geoff, that’s a cool recipe. I’ve never heard of fairy cakes before. What’s the texture like? Could you use mixed spice instead of mace? We don’t have mixed spice here in Canada but I made my own based on a Google search because I wanted to try your hiker bars recipe. I love them by the way 😊

Hi Maureen. The texture was quite light, but mine were not particularly soft and springy such as with a cupcake. They were firmer than that. You could use a little mixed spice, or no spice at all and they would be very nice.

Hi Patience. In the UK we have teacakes which are actually a bread dough with fruit in. They are usually toasted. I read that in the US can be cookies or small cakes. These particular cakes are small, but they have a denser texture than a cup cake. In some ways the texture is similar to a scone.
