I used love getting gizzards and livers from KFC. Back in the 1980s, my local KFC in Arkansas used to sell livers and gizzards fried in their original recipe seasoned flour. Those were some of the best gizzards I have had. They were always hot and tender. I've tried frying some gizzards myself a couple of years ago, but they came out tough. I was kind of puzzled on why they came out like that? I became discouraged and didn't fry gizzards due to that. Come to find out after watching cooking videos on KZbin on how to cook gizzards, I learned that you have to boil them before frying them. Most people I watched boiled them in chicken broth or seasoned water before deep frying. Now I know I can use buttermilk and vinegar in order to make gizzards tender as well. Thank you for the tip.👍🏿

If you pressure cook them in 1-2 cups of water seasoned with you favorite seasonings for 20 minutes before frying, they will be so tender you can eat them without teeth! My wife didn’t believe they were gizzards they were so tender. If you actually want a little chew just go 10-15 minutes.....I use my Ninja cooker.

if you pressure cook gizzards, they melt in your mouth. I'm sure you could pressure cook then bread and fry just to get the fried crunchyness. Also good pressure cooked with cream of mushroom soup then served over rice or mashed taters.

You toss the fried gizzards in hot sauce. Make some french fries. Then when you plate up you put 2 pieces of white bread on the plate, lay the gizzards on top of the white bread and toss the fries over the top and serve.

@@OLDSCHOOLSOULFOOD Chef, I just came up on your video on chicken gizzards! Only a true old school cook would take the time and patience to teach the younger generation how good the are, how delicious they can be if cooked right! Please always stay true to the older generations methods of cooking or the old school way of preparing food will be lost in time! I want you to tell your sweet MOTHER thank you for teaching you to value the old ways of preparing family meals with what they had available and could afford. You are a genuine and special person, but you evidently get your cooking skills and common sense from your dear Mama. Please give her my sincere thanks for raising talented and Christian children! I've tried boiling the gizzard's, marinating them to make tender gizzard's. My family hate's that! I deep fry them cleaned and breaded fresh from the package and it'd the only way they will eat them. They call it having the carnivore chew. KFC in the midwest would sell the one day a week only until they sold out.
