Good Monday Chef! Oh my goodness. Wow delicious pork roast! This is Sunday dinner come to town for sure! I can smell and taste it now. We ate this after Sunday service for lunch . Mom put a dash of vinegar in the gravy. Bone 🦴 in does have more flavor as you said. I always liked later that night or next day use leftover gravy and put on toast. Yes Lord! Hey Chef Jeff, that is a great looking roast and like you I use my insta pot so much anymore and love the results as well as how fast I get done cooking. I make my port roast this way except sometimes I use turnip roots instead of little taters and so very good. I use the greens as a side and cornbread. Love and blessings to you and Mom.
