Omelette Curry Bengali Recipe-Mamlette’r Jhol-Quick & Easy Indian Egg Recipe

Omelette’er jhol is a Bengali spicy egg curry prepared with omelette instead of regular boiled, pan-fried eggs. Although Bengalis love their egg curry, the ‘mamlette’er jhol’ occupies a special place in their hearts. It is quick to make and requires ingredients that are usually on hand, or easy to acquire in a pinch. What makes the egg omelette curry special, though, is the promise of a warm plate of rice with a flavourful, spicy curry-soaked omelette and juicy potatoes.
This recipe shows you how to prepare extra-spongy, fluffy omelette. If you feel like taking your dim’er omelette’er jhol to the next level, you will not regret the extra effort in preparing these light, airy omelettes. But this recipe works just as well if you decide to make a regular, pan-fried omelette. So whether in a hurry, or tired from a long, rough day, you’ll be hard-pressed to find a more soothing and well-rounded meal than ‘mamlette’er jhol’ and rice.

This is really a good reinvention to the recipe. Usually in order to make the omelette fluffier, we use milk and keep the flame on low and cover to cook evenly. Aah, every Friday you make me miss home!

I know this a tad bit too late considering this was posted in 2018 but anyway this is one of my favourite things to eat. At home we make omelette'r jhol too but not like this. I like this method too tried it once. We make it with mustard. You can give it a try. Rarely we put aloo but I like it more with aloo. Thank you for posting such wonderful recipes. I stay away from home and watching your content makes me less homesick. So a big thank you.

ইলেকট্রিক ওভেন না থাকলে সেদ্ধ আলু সহ ভালভাবে বীট করে পাইরেক্সের বোল এ করে মাইক্রো ওয়েভে ২-৩ মিনিট ঘুরালে খুব সুন্দর একটা একটা কেক এর মত শেপ হয়, সেটা কেটে কেটে টুকরা করে সেইম ভাবে কারি করা যায়। আমাদের গুরুজনেরা ডিম-আলুসেদ্ধ এর মিশ্রণ ভাপে দিয়ে পুডিং এর মত করে কেটে কেটে নারকেল-সরষে দিয়েও রান্না করতেন। সেটা অবশ্য টেস্ট অন্যরকম। বরিশালের রান্না। মাইক্রোওয়েভেও খারাপ হয়না। শর্টকাট আর কি। :)

A big thank you for your great Bengali food channel and the mouthwatering and super-precise (as an engineer from technical university I would say "scientifically reproduceable") recipes! Carry on, please (or should I say: "Curry on!"?). I found your channel just by chance when I was reading a travel report in our local Würzburg newspaper about Bhutan and I was searching the web for a recipe for Ema Datshi which was mentioned in the newspaper article. The Ema Datshi with the steamed Bhutanese bread rolls is definitely on my "which recipe to try next"-folde. What was striking me the most was your omelet curry, which I would like to sort in on top of my folder. When I clicked the "more"-link below the KZbin video, I found a link to the written recipe, but this links goes " > nul". Is there something wrong with the link or am I too fast and the recipe will come later? I just watch approx. 10 of your videos but I will definitely go on and watch more.
