About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

He is absolutely not the best Japanese chef lmao. Sure I'll be that asshole. But christ it's not even close. There are Japanese chefs with multiple Michelin stars. But many without any that are better...common. He's a solid nice you tube chef. Which is fine. Appreciate him for that.

"You have never watched football a day in your life.", that's a very irrational statement to make as a reply to "big grunts like them are supposed to pack on as much weight as possible for the season " because somehow even if a person may not know the exclusive diets of a football player.....that warrants a responded to suggest that the person who made that comment has never watched football a day in your life. That was an overly-emotional reply over something so minuscule. I'm using the term wrong....apparently at least 2 people agree with my statement......I doubt my confidence in using the term has been hindered in any way.

I notice the knife he uses is pretty thin. I've found thin knives to be much nicer to work with ... my everyday knife cost me $2.65 at 99 Ranch, a real cheap-O but fairly decent steel and I keep it nice and sharp and it works great. "3 Ladies" brand.

Yes. All fish eaten raw should really, really be sushi grade.

Sushi grade is a myth do your research. In fact the grand majority of fish is frozen on the boat. This kills parasites, still it should be fresh.

Yea beer batter is rare in East Asian cuisine because some customers are allergic to alcohol, but it would be so good here.

I was thinking he wiped the eggs off on to the towel so maybe the tiny eggs didn’t fall off of the knife onto the pristine white plate on the way back to the jar. Hence making a mess. So maybe keeping things tidy as the eggs are so small and hard to handle.
