INGREDIENTS:
500 G CHICKEN THIGH - CUT INTO CUBES
4 TBSP OIL + 1 TBSP GHEE
1 BAY LEAF (TEZ PATA), 2 CARDIMON, 1 CINNAMON (CASSIA BARK)
2 SLICED ONION, 1 TSP GINGER, 1 TBSP GARLIC, 1 TSP SALT
3 PUREED TOMATO
SPICES (TSP)
4 CHILLI POWDER, 2 CURRY POWDER, 2 CORIANDER POWDER, 1 CUMIN POWDER, 2 PINCH GARAM MASALA POWDER, 2 PINCH KASOORI METHI
4 SMALL MARRIS PIPPER POTATOES
1.5 TBSP VINEGAR
1 HANDFUL CORIANDER

As much as I've enjoyed the BIR recipes in the past, this one-pot series is much more convenient for me cooking at home and I can't wait to try the vindaloo. Also, never apologise for your enthusiasm! 😁

I'm just doing it for the second time. Manged to order all spices from Indian shop as in Poland those are not so easily available. Thank you for your knowledge and dishes

I don't mind the gravy stuff as I never cooked that way and reminded me of Creole gumbo's etc. But this is more my style

I made a pork one pot vindaloo the other week and was blown away, I made your one pot chicken saag the other day but made it like a garlic chilli chicken style and again was blown away. One pots are starting to become my favourite now over the base gravy BIR style, keep them coming.

Assalamu Alykum Wa Rahamtullahi Wa Barakatuhu Chef Latif. I am using this recipe to make lamb vindaloo. A couple of days ago I bought a 2.5 lbs. of lamb shoulder roast. Since I saw your recipe here, I decided to use the lamb meat to cook lamb vindaloo. The vindaloo is still cooking on the stove top, so I don't know the taste or texture yet. Later. I will update this post and let you know how was my lamb vindaloo. By the way, I am using authentic American lamb meat, not the Australian or New Zealand lamb meat which to me have a heavy gamey taste. An update to my earlier post: We had this lamb vindaloo for our dinner over a bed of white rice. It was very delicious and have to say "out of this world". The lamb was very soft and flavorful. Because I have grand children, I reduced the amount chili powder. I am not sure if I used the spices in the right proportions, but nonetheless the flavor was superb. Everyone of my grandchildren raved about this meal. Chef Latif, THANK you for all the lovely posts that you put up on this channel. May God restore mercifulness upon you and all of us.

It's amazing result every time I make this curry, only 1 teaspoon of chilli pepper for us, this time I only had sweet potatoes so used them sweet and spicy balanced well

If I make one pot Vindaloo I do it very similar to this, but before I do stage 1 like yours I sprinkle the raw chicken with curry powder then sear it in the hot pan with oil for about 3 minutes then I spoon it out and put it on a plate to be added later as per your recipe. It kind of seals the chicken, and makes it super tender after it has been cooled the second time in the sauce... but because it is sealed you have to let it cook slightly longer when added to the sauce at the final stage. Thanks for showing the spice quantities btw, I was always doing it by guesstimating the right amounts but this video helps me a lot.

Wonderful gravy, oil/ghee just separating, the addition of methi/garam/coriander at the end makes all the difference. The one-pot approach is a good method.....

dude, if you do not show love, enthusiasm, joy, in your food/cooking, then you do not belong in the kitchen, im not a great cook, im not even a good cook, but, i do get my moments, but, either way, i LOVE to cook, honestly, my fav hobby is to spend hours in the kitchen, blasting good music, drinking alcohol and cooking and if the food comes out, good, i am happy, if the food comes out amazing, i am smiling for days haha, i have done this a few times now and everytime it has come out amazing, thank you and i am about to do this again tonight, spent over an hour to get the things on the ready and the kitchen on the ready, loads of bees and good music, yes, i could have done it in 5 mins, but, wheres the fun in that? cooking is an art, it is a masterpiece, it is about having fun and enjoying the final result, if people take it as a chore or a must do, then they are boring :p anyways, thanks for another amazing vid, keep them coming dude, i love watching and cooking along with you :) thank you

I gave this a go last night and wow it’s truly superb. From the outset with the smell of onions was already enough to make my mouth water. I recommend cutting the chicken pieces quite large as eventually they will end up into good mouth sizes. I guess with total time of prep and cooking it took a good 1 1/2 hours. Highly recommend this recipe. I can’t wait to try the Patia ❤

I normally use a base gravy, not cooked a curry from scratch in a long time so thought I’d give this a go… wow, was NOT disappointed! So easy, no hassle cooking a base for hours. A really great tasting curry. Might go with the 5 teaspoons of extra hot chilli powder next time. Great video 👍🏼

Made this last night, absolutely brilliant. Two small things. The list of ingredients in the comments doesn't show 1/2 tsp turmeric although Latif does say it in the video. And when you first add water, it is to soften the onions *and* to "de-glaze" the pan, getting all the ginger and garlic from being stuck on the sides of the pan into the sauce.

Soooo, in my late teams (2 or 3 take aways a week, or sit downs), I discovered Chicken Tikka Masalla, worked through Ceylon, Rogan, Vindaloo, Tindaloo, until I was the only sober guy ordering and eating a Phall 👍 In later years, and not so many curries each week, I'm enjoying Garlic, Chilli Chicken, and finding and cooking, Latifs BIR restaurant version, I thought "that's it", I've found my goto curry - and sooooo many thanks and love 🙂 ❤️ Thought I would give this one pot Vindaloo a try . . . . . a blast from the past, . . . And WOW, great result 👏 My wife found it a bit hot, and it did taste like somewhere between a Vindaloo and a Tindaloo, but that may be my particular hot chilli powder, home made curry base spice or heavy handedness, on my part . . . . Either way, bit hot for the wife, but me . . . . Gonna use this as a base curry, and add some garlic and green chillies - and it's probably, for me . . . . The *one* 👍 Sooo many thanks again 🙂
