Dear Chef, I wrote to you last week to inquire if I could use hydrated pumpkin. I just made the pie, but instead of pumpkin, finding that my hydrated pumpkin powder is stored in quart jars and not wanting to disturb the pumpkin, I opted for hydrated yams instead, I did not dehydrate the yams just sifted the powder right into the cream cheese mixture and the results are out if this world! It is so tasty and much better then cheese cakes off the supermarket cold box. Chef, Thank you so much for your inspirations and for sharing them with your viewers.

By the way, for the folks that are going to make their own mashed pumpkin, you can use butternut squash (as the manufacturers in North America do that)

For anyone who has to be gluten free, you can use Arrowroot cookies as your crust. Just place the cookies in a ziplock bag and crush VERY finely with a heavy rolling pin...to where it's almost like a powder. Then toast the crushed cookies VERY lightly in a bit of butter, and press into pie pan. You could also use GF sugar cookies, or GF graham crackers if you can't find Arrowroot cookies. That said...this looks divine! I LOVE ANYTHING pumpkin and also cheesecake. Can't wait to try it! YUM!

If you can get ginger snaps, (a type of cookie in the USA.) make your crust out of those, make a big improvement on the over all flavor.

JESUS IS LORD I was watching a show that said there is actually NO Pumpkin in the tinned pumpkin purée we’re use to buying and instead they developed a squash type gourd thingy or something...it’s less watery, less stringy, cooks up consistently and is easier to grow blah blah blah It’s what’s in the cans since like the 1950s! Hi David,i always enjoy when i get a break from all of the baking i do to watch some of your videos. Try making this with a caramel sauce or even a butterscotch sauce and just drizzle over the top or even make a pool of it on the serving dish before placing the cheesecake on it. It is so rich,creamy,and good you will be singing the old Tavares old 70's hit "Heaven must be missing an angel" hahaha I am serious it IS that good.I love my 70's and 80's and always when working,i have music playing to de-stress..especially during the holiday baking times.ENJOY!

Looks fantastic. I would probably prefer this a bit frozen since I like firmer cheesecakes. So happy you said North America since Canada has canned pumpkin and celebrate Thanksgiving (much before the americans) too. And we're not american.

A Downey I’ve always been curious about this, do manufacturers in your country print the amounts on your labels in both metrics and ounces? I believe every label I’ve seen in America prints our amounts in both. I can usually figure out a European recipes requirements by comparing the amounts on the labels. If a soup, stew or sauce calls for 500 grams of diced tomatoes and their juice I can get a can that contains 411 grams (or 14.5 ounces American) then either add a couple tablespoons of tomato paste from a tube to make up the difference or a little water. Most of the time those type of recipes are pretty forgiving and the amounts aren’t really set in stone anyway. But it makes it a lot easier to adapt recipes from all you wonderful people who are willing to share. It’s a bit trickier in baking though, where specific amounts are more important for proper results!

In my country they dont sell canned pumpkin as well. Pumpkin is mainly used for savory dishes here. And its not eaten that often too. I Never tried pumpkin deserts. I will try to make this one day. It looks super delicious.

I’m in NSW and I’m able to get Libby’s canned pumpkin, large tin for around $5. I get it all the time as I love pumpkin desserts and pie. Everyone needs to start hounding woolies and Coles asking for the Libby’s canned pumpkin.
