Ingredients:
2 large onions
1 cup (125g) all-purpose flour
1/3 cup (42g) cornstarch
1/2 teaspoon Baking powder
1/4 tsp of cayenne pepper
1 teaspoon Garlic powder
1 teaspoon salt
1/4 teaspoon Black pepper
1 1/3 cup (320ml) of cold sparkling water
2 cups (220g) Panko breadcrumbs
Oil for frying
Directions:
1. Cut the onions into 1/4-inch (1/2 cm) slices and separate into rings.
2. In a large bowl stir flour, cornstarch, baking powder, cayenne pepper, garlic powder, salt and pepper. Gradually add water and whisk until smooth and thick.
3. Dip onion rings in the batter, then coat with breadcrumbs. Repeat with all the rings.
4. Heat oil to 350-360F (170-180C).
5. Fry onion ring in batches until golden and crisp, about 1-2 minutes. Transfer to a paper towel to drain. Serve hot.

Go Burgers sells the best onion rings I've ever had, but $6 something for 4 rings is too much when I want more. I started buying them at the grocery store, but its not that great. I searched for a vegan recipe and came across your video so I'm going to try this. I may add couple spices to the bread crumbs (Mr. Dash, sage or rosemary) though. Anyway thanks Edited: could I bake these instead of frying them? I'm trying to stay away from much oily food.

If you want the same result, I agree with Jayant. No. However, I say try it. Keep watch of it. Watch the change of color. Take it out before it gets too dark. I've never tried to make onion rings. My cooking experience tells me, baking it will taste different from deep frying. I have no clue if it will taste good or bad. It is a low cost cooking experiment to try. The other cost is making your home smell of cooked onions and that smell can get into your clothes.
