I love this! I'm half filipino and white, but was raised in a filipino household so I'm very familiar with the food. For the garlic rice; it's better to fry. Make the white rice(like the Asian way! Wash and boil) and once it's cooled down, fry it with oil, salt, and lots of chopped garlic. It'll be dry, yet sticky! For the adobo; I would've added a bay leaf for added flavor and fragrance. I don't add carrots, more just onion and sometimes potato. I don't know much on how to make turon, BUT it's best to use plantains. Less sweeter, but after all the caramelized goodness, it's decadent!! You earned my follow! ❤❤❤

As a Filipino, I have found out through experience that adobo tastes the best when you just mix all of the ingredients together, boil it then let the liquid reduce till it turns into a sauce. Chicken and pork mixed together is the way to go and don’t forget the bay leaves.

The reason why the jackfruit didnt work for you guys is because on the can you used it says "young green jackfruit", which is used as a meat substitute. We cook it with coconut milk, ginger, and a bit of fish sauce (or soy sauce if vegan). Sometimes we cook it with banana hearts too. Very nice veggie dish that can be a main or a side, and the young green jackfruit when cooked has a meaty pork-or-tuna-like texture to it. For desserts, we use ripe jackfruit. You'll know it's ripe because it should be a bright yellow and very fragrant. The banana that we use for cooking is also very specific! It's called Saba. Im not so sure western countries import that kind of banana. It has a slightly tarter, sweeter flavor and a creamier texture than your typical cavendish, so it is perfect when cooked as turon, or even just boiled or fried.

Wow! I've never even made pancit canton myself. I'm a Filipino born and living here in the Philippines. Thank you for going through all this to try our food and glad you loved most of them. You might wanna check panlasangpinoy for more authentic versions next time. No, it's not my website but I usually go there for recipes. The turon calls for overripe saba which might be difficult to find there....I was concerned the plantains didn't do them justice. Oh and you should wrap the lumpia filling raw not cooked. Like what the Chinese do. Lumpia and pancit are Chinese influence. And you might want to try eating with a spoon and fork next time for a complete vibe. I find it funny you're using a fork and knife. We don't do that here unless we're having steak. Btw, great pronunciation of Tagalog words. :) And loved your vlog.

Just watching you working so hard is enough! Pusong Pinoy (Filipino heart) made Philippines proud, just some corrections… we use plantains when we cook them, never bananas because they get mushy/ soggy Next is the jackfruit didn’t quite see if you use ripe ones (yellow) or unripe are bit white and they really make huge different. Highlight your tapsilog (good pronunciation) looks so legit!!!! I live in Italy would go wherever you are to taste those bad boys 😋🥰

Regarding the garlic cubes: korean food uses a lot of minced garlic so what my mom does is just peel a whole bunch of garlic one day and just pulse it in a food processor. Then she puts it in a zip lock baggie and flattens it so it's a thin layer and freezes it so it's easy to break off when needed in a recipe ! Ive also seen it put in like ice trays to freeze to make little cubes as well. Such a good life hack!!

Great job! Our food is usually on the salty side because it goes well with the bland boiled rice or a dipping sauce suvh as vinegar or a drizzle of lemon/ calamansi such as in your pancit noodles. We use different type of banana that isn’t too ripe which is a bit firmer and less sweet. The sweetness will come from the sugar and the ripe jackfruit. But overall two thumbs up! Tip: overnight leftover adobo is best shredded and deboned then lightly fried on its own oil after allowing the sauce to soak in the meat and reduced until only the oil is left, over low fire. Then eat this with egg and garlic rice for breakfast instead of the beef. Its gonna be a bomb, trust me! Adobo flakes can alao be put in between your pandesal for breakfast as a substitute for rice.

Some tips: 1. Tapa : Fry the rice in the same pan/wok you cooked the beef on so the rice gets coated in the fond. Iron or carbon steel is best for this because you get a lot of fond, but unlike stainless or enameled iron will typically not require a lot of acid (like wine or lemon juice) to deglaze. Just oil can be enough to pick up most of the fond. When you take the beef off, add oil, let it heat up while starting to stir the oil around and pickng up the fond, then add garlic. When they start to brown, add the rice, toss it around. Optional: sprinkle some of the Knorr or Maggi liquid seasoning as you toss the rice in the pan. 2. Chicken Adobo : Think of it like coq au vin, but with soy sauce and vinegar instead of wine (cooking sake and mirin can be used without messing up the flavor profile while making a difference in the depth of the flavor). Precook the cooking liquid and spices together, let cool. Use some as marinade for chicken thighs, save the rest. When you cook, pat chicken dry, sear and crisp the skin up. Off the pan, deglaze with onions and garlic, then drop in the chicken skin up, then pour in the reserved liquid halfway up. From this point on you just braise to cook the chicken through. Optional: add shiitake or porcini mushrooms with the onions. Lastly, if you want to experiment with different soy sauces, I'd recommend tamari from Wakayama, Japan as the best for this (I'd recommend a different pairing if you cooked this with pork or beef though). 3. Fried noodles : There are many ways to do this and in SEAsia the prevalence of dried noodles (thanks to the lack of Chinese chefs hand pulling them or Japanese machinery cranking them up in the kitchen) made for frying the veg and protein, adding stock on top of the (oyster) sauce, and then dropping in the dried noodles the more usual method. For anyone using fresh noodles though this really cooks more like chow mein or yakisoba (the distinction is more on what cookware you use, ie, yakisoba is more usually cooked on a flat grill top or at home, a skillet; the Chinese version is always a wok). Halfway between those is raw fresh noodles cooked in the thicker sauce. I personally prefer the second method as there's less of a chance of making the vegetables soggy, however that is also not an indicator that such a method is easier. You need to keep things moving, frying one ingredient at a time then mixing everything together at the end just before dropping in the noodles, purposely igniting the vaporized oil to make for smoky noodles, etc.

As a Filipino, I love this video! Also, it was me who gave you the adobo recipe from the last time you cooked it 😂 just as tip for the next time you make the lumpia, make sure you use brown muscavado sugar for the turon, and don't cook the meat before wrapping it up. It will cook on a medium to low heat in the oil. Great job though!!!!!

Really appreciate the effort! Things to think about, for the lumpiang shanghai we don’t usually cook the filling so it holds together better, adobo usally doesn’t have vegetables and we usually use saba banana for turon. But to be honest, for someone who hasn’t tried making or possibly eating majority of these dishes, i’m really impressed! I can see you really researched this. Glad you enjoyed our dishes!

Turon is like a banana egg roll and there's a separate food that's closer to "banana fritters" which is called maruya. Maruya are sliced not-so-ripe bananas coated in batter and deep-fried. It's then sprinkled with cinnamon sugar (or just plan sugar when it's sold as street food).
@lnc8186
@lnc8186 3 жыл бұрын
When you make lumpia and you’re cooking the fillings, make sure you cool it off first before wrapping them in the wrapper or the wrapper will tear. Wrap them a little bit tighter next time as well. For the turon, you need to use ripe, cooking bananas like the Filipino saba or ripe plantain. Use the ripe, yellow jackfruit and not the green one. That’s used as a vegetable, usually with coconut milk that’s why that turon didn’t come out right nor taste good. For the pancit, sautee all the meat (that’s been boiled beforehand, saving the broth) and vegetables first, take them out of the pan once they’re cooked and set aside so they won’t get soggy from too much sautéing and mixing. Cook the rice or egg noodles next with a little bit more oil and the broth from the boiled meat. Once the noodles are cooked, turn off the heat and return the meat and veges to the pan, mix altogether, and serve with fish sauce and lemon. The noodles can be found in the Asian market. Your pancit looked a little soggy because you used the wrong noodles. I’m not sure where you got the recipe for adobo with veges but we don’t usually add veges to our adobo. You may marinate the meat first, overnight if you like but not necessary due to slow cooking under low heat or fire. To cook the next day, fry the meat first in a little bit of oil, then add the marinade sauce and cook on low fire until the meat is tender. Don’t stir until the vinegar smell is gone and the sauce is reduced to almost dry or you can leave a little sauce if you want. Don’t forget to add bay leaves when you cook the adobo as well. When you serve the adobo, there shouldn’t be a strong vinegar smell but a blend of smells and flavors. The ratio for your sauce should be 1/2 cup soy sauce (or 1/4 cup if you use Filipino Silver Swan soy sauce cuz it’s too salty), 1/2 cup water, and 1/4 cup vinegar. I use Japanese vinegar called Mirin rice vinegar because it has a little sugar which makes the adobo taste really good. You could’ve used that pork for adobo as well. Pork is the best meat for adobo esp if it has fat. Overall, you did pretty well for a novice “Filipino” cook. 😉

Does it matter if you use a brown sugar or white sugar for the turon?
@ethangold4900
@ethangold4900 3 жыл бұрын
@@renjunsshoulder4181 I don't think so, but people usually use brown sugar since it's sweeter and it looks really good when caramelized But it's bitter and dark when the timing isn't great Also, some turon recipes don't use much sugar since the banana is already sweet

I have been living in PH for nearly 4 years & you did a very good job. May I suggest when making Turon, you use brown sugar instead of white as the locals do & also try eating with spoon & fork, not a knife or kamayan (with fingers). Adobo can be made anyway as long as you have soy, vinegar, peppercorns & bay leaves/laurel. I use wither pork or chicken & bulk out the dish with what ever vegetables I have around - always potato with beans, carrots, peas, sometimes canned mushrooms, maybe a bit of sweet corn kernels & even cabbage put in at last moment so it still has a little crispness to it. If you like spicy foods, try a dish called Bicol Express & vary chillies to your taste.
