If I remember correctly, wasn't there one where they had money on top of their back hand, but to collect the money, they had to use a knife to stab the money to pick it up? If you stabbed too far, you stab your hand.

I actually never thought "Why didn't Joseph use Hammon?" and I guess there are two reasons. One, hammon isn't subtle you could see Joseph cheating with hammon a mile away. Two, he's out of practice the guy literally forgot most of his Hammon training/techniques in the 50 years of peace he's lived.
