Its 11pm sat eve .sitting with cake and tea enjoying like the billyo. Even though i used half one raw lemon, 1 cooked lemon, bit of i orange juice, less sugar and half the eggs..its delish!! its an shakeabke recipe i made it in smooothie maker too .super simple! Grateful.

I’ve discovered this wonderful orange almond cake in the Near East when traveling in Lebanon, where most of their pastries are almond based. The only difference with your cake is that they use a pinch of cinnamon. Greetings from Athens

HI Susy. I am glad this brought back some memories. The recipe I used is slightly different to the Claudia Roden one, in that it uses a little less sugar and no baking powder. But I am sure the result is very similar.

Hi Hayley. I'm glad you enjoyed the Madeira cake. The answer to your question is no. The whole orange, including the peel is used in this cake. Only any seeds are removed. Boiling the oranges beforehand softens the peel very well and it breaks down very well when processed, giving such a lot of flavour.

Geoff, did you put the syrup on the bottom of the cake or the top? It looks like the cake was upside down, which makes sense as the other way would not be so open. Looks delicious and will definitely try it.

I just tried and was amazed by the juicy orange taste (also applauded by my friends). Thank you so much for the great recipe. One question: during baking in an oven (pin/needle test) and when eating, the center part looked/felt as if it is a bit undercooked. Can you please advise whether it is normal or I need to bake more. Hi Planman. The cake is always. going to be very moist, due to the amount of moisture in the oranges and eggs. It will also be a dense cake as ground almonds don't bake the same as wheat flour does. However the cake should be cooked all the way through. If you think the centre seems a little undercooked you can bake for longer, and perhaps place some aluminium foil on the top with a hole cut in the middle, to allow the centre to cook through.

Hi Geoff. Ok I tried it today and from the recipe I made three cakes. Yes there is no bitter after taste n it's yummy. I sprinkled almond slivers on the top of the cake as a border n when done I used d orange syrup but added orange blossom water to enhance it further n finally decorated it with candied orange slices. Geoff Cooper I am Persian, we have a famous food That we make with orange peel and cranberry, rice and chicken, how we do we boil the orange peel three times until we take off the bitterness from the orange then we add sugar and some zaftan then to cranberry just add a little bit oil and mix it with orange peel to cover the rice that we already made it we already have it in beautiful plate

Yes you can certainly use a blender for the oranges, but I think I would mix everything in a large bowl, by hand. It will work very well. But I think a blender would probably be ok too.

HI Gone Guy. That's great! I am so glad you enjoyed it. I think a lemon version would be very nice. However quite how many lemons to use might pose an issue. To obtain the same volume as for the oranges would require 3 or maybe 4 lemons which might make the flavour rather too intense. However I think maybe using just two lemons would make a slightly less moist cake but with a more mellow flavour that would be very good.

Hi Megan, I am not an expert on this sort of question. However I did a little searching and found an example, on Nigella's website where it is suggested that using 125g of plain flour for each 150g of ground almonds is a workable solution.

I think it will be fine to use that pan. However I think the cake may not be so high, and putting the syrup/icing on top my be more difficult.

Yes all is well for me in the UK, thanks. I am sure soft brown sugar will be fine too, it will just change the flavour very slightly since light brown, and more so dark brown, sugar has more of a molasses flavour to it than the refined sugars.

HI Elissar. I am find thanks. Personally I wouldn't reduce the eggs in the recipe. However you could look at how to use ground flaxseed, or chickpea flour as egg substitutes. I have read that they work quite well in some instances.

@Geoff Cooper Hello back Geoff, and thank you for your reply. I normally follow your recipes and advice but this time I had to navigate. Over the years I have developed a very strong intolerance to eggs. After eliminating any them from my diet completely for many years, I could introduce them to my diet again but moderately, I.e. in cakes and cookies etc...which is why I am very concerned on the quantity of eggs in a meal or dessert. After researching , I ended up replacing 3 eggs with a mix of full fat milk and yogurt. The cake came out exquisite and I am very glad to be stubborn and try making it in a way that I can handle. Thanks again for all your efforts and the delicious recipes you share with us. Cheers, Eli

Hi. I did some searching and found that it is possible to use honey instead of sugar in baking. However there are some differences. So, for instance, this is one article that I read on the subject: Some people use it cup for cup, others prefer 1/2 cup - 2/3 cup of honey per cup of white sugar. Reduce the amount of other liquids by 1/4 cup for every cup of honey used. Lower the oven temp about 25 degrees F to prevent over-browning and add 1/4 teaspoon of baking soda for each cup of honey to your batter.

Hi Mona L. No you don't need to use organic oranges. But you should wash the oranges before using them. Yes the oranges are unpeeled. So much of the flavour in is the peel.

Hi Pat, yes you can use granulated sugar. I use caster sugar as it is finer and dissolves quicker. But in this type of cake granulated sugar will work just as well. I hope you enjoy the cae if you make it.

Hi Hephzivah Israel. The important thing for this recipe to to ensure the whole orange(minus the seeds) is reduced to a pulp. If you can do that by hand, maybe cutting finely and mashing with a fork, you could do it without the processor.

HI Connie. Yes it can. I use caster sugar in almost all my recipes, unless they need brown sugar. But in most cases, if not all, granulated sugar will work just as well. It is just that the grains are larger in granulated sugar.
