Orange Chiffon Cake with Mixed Berries and Cream
One of my favorite birthday cakes to make. It’s light, delicious, and always a hit!
*Ingredients:*
- 2 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1 1/2 cups sugar
- 3/4 tsp salt
- 1/2 cup vegetable oil
- 3/4 cup orange juice
- 1 tbsp orange zest
- 6 egg yolks
- 10 egg whites
- Pinch of cream of tartar
- 3 cups heavy cream
- 4 cups mixed berries (strawberries, blueberries, raspberries, etc.)
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
*Instructions:*
1. Preheat your oven to 325°F (165°C). Prepare a pan by ensuring it is clean and ungreased.
2. Mix together the flour, baking powder,and salt
In a separate bowl, whisk together the vegetable oil, orange juice, orange zest, 1 cup sugar and egg yolks add the flour mixture and Stir until just combined.
5. In another bowl, beat the egg whites with a pinch of cream of tartar and half cup of sugar until stiff peaks form.
6. Gently fold the beaten egg whites into the batter, taking care not to deflate them.
7. Pour the batter into the pan and bake for 18 minutes or until a toothpick inserted in the center comes out clean.
8. run a knife around the edges to release the cake from the pan
9. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
