You can use any type of gluten free flour you like! I would recommend using All-Purpose Gluten Free Flour

It's OK to use mandarines instead of orange, isn't it? I'm allergic to oranges. Delicious recipe. I'll make them soon perhaps with pomegranate juice (mash the seeds in a Ziploc bag with my hand & squeeze the juice making a little hole in it), Will that be OK?

Yummy. Any chance that you will make a “Merengado de Chirimoya”? I don’t even know if cherimoyas are even available in Australia. Mark Twain used to say that cherimoya is "the most delicious fruit known to men" If not, a Pavlova Cake will do. I tasted both of these desserts at Gaston Acurio’s restaurants in Lima, Peru. They were out of this world.
