Hi Laney! i dont see you explained how to outline the text, can you please advise?

Hi! Yes you’d select all the text and either right click and choose “create outlines” or go to the Object menu and select it from there! The keyboard shortcut is ctrl+shift+O I believe.

If the paper is colored e.g. green do we then setup only the digital file and the composite file as green and the foil print file as white?

Foil file will always be black, 100%K and you’ll tell the printer what color foil to use. Same with letterpress - black 100%k and then tell them the ink color. Digital print file will always be the colors you want to digital print. Composite file you can put a background color on to make sure they remember which paper color you’re printing on!!!
