When I married my 20 year old Filipina sweetheart I woke up the next morning and realized she didn't know how to cook American food. I thought I was going to starve the next few years. The first night she fixed me pork adobo. It was so good I wanted it the next night also. Never tasted anything quite like that before. By the end of the first month she had me eating most everything she cooked. There are still a few dishes that I prefer to skip, even after 48 years together now. Our grandkids have learned to enjoy the food their lola taught their parents when they were growing up. Another generation of those who love Pinoy food.

Mama Lulu really reminds me of my own late aunt; warm, funny, chatty and huggable. There was never a time we visited her without our tummies stuffed with her food, plus she’d packed more for us to bring home. In early 1900s Spanish was the most widely used language in the capital region and I think Manila is one of the top cities in the world with a lot of Spanish speakers . It was changed when Americans came and also Spanish was also part of the study in school but later it was being removed . That is the reason why only less Filipinos can speak Spanish but still there are words in Spanish live up to this day .

My opinion but i think is best to create a standard adobo, yes there is a lot of variety but and we should respect it all equally, but we need to show the world what a standard filipino adobo looks like so many foreigners can make it . The Humba makes more sense. Its the less talked about dish. Adobobo is over rated and ridiculous. No one even eats it before the media kept promoting this sad dish as definitive of Filipino food culture.
