I just made this recipe today and I soaked the beans overnight because I feel it helps eliminate some of the gassiness. And I only had one TBSP of chili powder so I used two TBSP of menudo seasoning mix. They came out so flavorful and very delicious!

Made this today since it is cold and rainy. Very good taste however i had to add salt (a good tbsp at least) after cooking and had to keep it in the oven for just over 4 hours for the beans to be cooked (otherwise they were still quite hard). But great texture and flavor for the finished pot! Of course, wonderful with corn bread....

Mushrooms are often used to replace meat. Hearty mushrooms like portobello are used like a hamburger patty substitute. I often use a can of dark or light red beans black beans and a can of refried beans for thickening. I’m also noticing more people are shying away from the bitterness of green peppers and using the sweeter ones. Of course when I make chili it’s often gone before dinner

I personally would love green peppers in my black bean chili. However, while I can eat raw green peppers until the cows come home, something happens to green peppers when they're cooked that does NOT agree with me so that if I ate some today (Wednesday) I would still be belching them up on Monday.

Aquí en la isla “Tortuga” preparamos las “caraotas” (yes, black beans!) con un recipe ligeramente diferente. ¿Qué me gusta de las sugerencias de Julia? Añade ella chipotle, chili, y crema agria. (La química de la crema agria neutraliza la pungencia del chipotle; ésto según aprendí en mi clase de química de alimentos). Julia termina cociendo las caraotas en el horno. Lo preparo todo en la hornilla. Tenemos déficit de gas acá y el horno usa cantidades exhorbitantes de gas. Hago llegar apretado abrazo a Julia.

My grocery store doesn’t sell pre-pealed garlic (at least not that I can find) but sell small bags of fresh garlic so I buy that and peal them by hand and put them in ziplock bag in the freezer. I run the frozen garlic under running water for 30-45 sec, thaws them out enough to put them the garlic press.

To say a recipe is “free” and fail to mention access to the recipe requires giving your email is wrong in my opinion. The form of tender being personal information constitutes a form of payment. That refutes the offer of free access. I really wanted the chili recipe. When I was barred unless I gave personal information, I felt I’d been conned. Demerits to America’s Test Kitchen for not being fully honest. Edit that part of the script so people will cease being blindsided like I was.

I tried the recipe both ways. First time I did not soak the beans and it took almost 5 hours in the oven and the beans were still not fully soft. Just finished the second time and soaked the beans overnight. After 2 hours, the beans are perfect, so YES - SOAK THE BEANS!

Chipotles are under utilized in American cookery. I add them to my lasagna sauce sometimes and garnish split pea soup with chipotle and sour cream. Chipotles are better than chocolate.

This recipe was disappointing. As other commenters have noted the lack of salt, I added a tablespoon along with the peppers before the second hour in the oven, and hoped for the best. Despite that addition, after the second hour in the oven, the dish was completely bland, very watery and the beans were not soft. (Oven temp was 160C / 320F) In order to salvage the meal, I reduced it without a lid on the stove for an hour - this improved the consistency and softened the beans. In terms of flavour, I added more salt, ground cumin, nutritional yeast, red wine vinegar and sugar.

The beans, added dry, won't cook in 2 hours. Tried it. Even at 3 hours, they are still a bit harder than ideal. Soak first.

I was with ATK from day 1 and I can tell you right now, the details given in the video are not even close to what the 15 year old television series provided. It is fine if you like it, no problem. But, as I said, there are better resources available now.

Ingredients: 1 pound white mushrooms, wiped clean, trimmed, and broken into rough pieces 1 tablespoon mustard seeds (see note) 2 teaspoons cumin seeds (see note) 3 tablespoons vegetable oil 1 medium onion, chopped medium 9 medium garlic cloves, minced or pressed through a garlic press (about 3 tablespoons) 1 tablespoon minced chipotle chile in adobo sauce 3 tablespoons chili powder 2 ½ cups vegetable broth 2 ½ cups water, plus extra as needed 1 pound dried black beans, picked over and rinsed 1 tablespoon light brown sugar ⅛ teaspoon baking soda 2 bay leaves 1 (28-ounce) can crushed tomatoes 2 red bell peppers, stemmed, seeded, and cut into 1/2-inch pieces (see illustrations below) ½ cup minced fresh cilantro leaves Salt and ground black pepper Lime wedge, for serving

Instructions: 1. Adjust an oven rack to the lower-middle position and heat the oven to 325 degrees. Pulse the mushrooms in a food processor until uniformly coarsely chopped, about 10 pulses; set aside. 2. Toast the mustard seeds and cumin seeds in a large Dutch oven over medium heat, stirring constantly, until fragrant, about 1 minute. Stir in the oil, onion, and processed mushrooms, cover, and cook until the vegetables have released their liquid, about 5 minutes. Uncover and continue to cook until the vegetables are dry and browned, 5 to 10 minutes. 3. Stir in the garlic and chipotles and cook until fragrant, about 30 seconds. Stir in the chili powder and cook, stirring constantly, until fragrant, about 1 minute (do not let it burn). Stir in the broth, water, beans, sugar, baking soda, and bay leaves and bring to a simmer, skimming any impurities that rise to the surface. Cover, place the pot in the oven, and cook for 1 hour. 4. Stir in the crushed tomatoes and bell peppers, cover, and continue to cook in the oven until the beans are fully tender, about 1 hour longer. (If at any time the chili begins to stick to the bottom of the pot or look too thick, stir in additional water as needed.) 5. Remove the pot from the oven and remove the bay leaves. Stir in the cilantro, season with salt and pepper to taste, and serve with the lime wedges

You can always substitute flat leaf parsley. My S/O is one of the 30% and that's what I do
