Mom always had a meal on our table, no matter how little we had, I remember when fridays mom would buy an 8 pack of bottle of cokes and she'd open ONE bottle and we'd all get a small juice glass (glass from those cheese spreads) ...with a spaghetti or homemade pizza meal. I remember splitting a huge steak with the bone, six ways on Sunday nights-- or a roast and potatoes! If we were good at Church, we'd get breakfast/lunch after church at BURGER CHEF! Hamburgers were only .35 each and you could have all the pickles and ketchup your bun would hold! YUM! My dad only cooked a few times for us, when mom was in hospital. We got a cold opened can of uncooked WHOLE POTATOES and a cold can of green beans. Needless to say, we were glad mom lived through her surgeries! LOL! We were so skinny; other kids made fun of us; but I thought we ate like royalty, sharing food portions, I thought was normal growing up. I never had a steak or lobster out until I was of dating age; my first date was a trip to Red Lobster and I had no idea how to get the meat out of the tail so I ordered it shredded on a salad as not to embarrass myself! LOL! PIzza King was a treat too! That was on movie night matinee where we got to see KING KONG and the BLOB at the theater! Our cell phone was a phone booth at the downtown IGA parking lot! You rode 6 blocks to get there and usually it was faster to just ride your bike back home and tell mom what you needed! LOL!

@@OurLittleHomestead I remember mother buying the big can of ravioli and she would make a bowl of mashed potatoes. We each got 3 ravioli except daddy. He always got the 1 left after dividing because he worked so hard to buy it. After church we had peanut butter sandwich on mother's homemade bread.. Yummy!

Yes, seeing my prepping mistakes also. Freeze milk and juice in ziploc bags instead of cartons, lay flat. Twice the storage. Put in less milk than the bag can hold to squeeze the air out and making it flat easier (it will swell). Shred cheese vs freezing in blocks. Don't forget back up can openers. Try to get as many flip top cans you can. If you can't grow, buy and dry - get a dehydrator

@OurLittleHomestead4 жыл бұрын
Yes, every life lesson is a wake up call to be ready for the next big emergency. But when prepared, it just becomes second nature to conserve; to be relaxed in our daily life knowing we have it together and no panic is needed! NO rush to buy tpaper; I had 140 rolls of toilet paper in storage over the last 8 years. I let those who didn't stock up have it when I went to the store...other than what I bought to give away to those who could not get out. I gave all my last minute 'hoarding' preps from that video away to ppl porch boxes. I only kept a few items I knew I was low on. I couldn't believe this happened in the middle of selling our home. We'd just gotten an accepted offer and all our things were put in a warehouse! I had to go dig some items out, like masks and gloves...etc... it's been real, for sure! But no panic here, we had everything we needed to stay indoors till we knew more about what was really happening. You just never know.

See if you can get your son-in-law to try drinking iced brewed tea. You heat a quart of water in a pan, til almost boiling., drop in 5 or 6 plain black tea bags, turn off the heat, and let it steep 5 min. Remove the tea bags and pour into a gallon jug, fill up the gallon jug with more water. Chill in fridge. They have flavor drops you can add to sweeten, or you can use the mini individual flavor drink mix to add as well. I like the raspberry flavor drops.

@patticuva12814 жыл бұрын
A lot of the things you are out of, except for tomatoes, are processed foods and dairy- try eating without them- or try shelf stable oat, almond or organic soy milk instead of dairy. canned soups are full of sodium and preservatives. you can make non dairy cheeses quite easily with raw nuts, especially cashews and you can probably dry can them or store in freezer. Your videos have encouraged me to think more critically about items i should keep on hand- especially when I an't shop every week for fresh veggies and fruit.

Loved the tape. For your lactose free milk check into the A2 milk. When I was a small girl on the farm we used Jersey cow just found out it is an A2 cow.
@OurLittleHomestead4 жыл бұрын
That is interesting! What does the A2 mean?
@sandydarroch274 жыл бұрын
@@OurLittleHomestead It is the milk that is different. I am not an expert, but it seems that most American Dairy have both A1 and A2 protein. It is the A1 that most people have an allergy to. When I tried the A2 kind I did not notice any problems. When I did the reading I got the message that A2 also comes from other manuals like goat and bear and etc. So I thought that is why in the earlier days, if a baby could not drink cow's milk, they were advised to drink goat's milk. Please you look it up to see if you come to the same conclusion. I did a lot of reading and when the A2 (the name on the carton) came to the grocery store I jumped at the chance to try it. I quickly noticed a difference. Hopefully you will too.

You can buy Liquid Lactase Enzyme drops to transform regular milk into lactose free milk. I always keep some on hand because everyone in my family has an issue with lactose except me. I keep them in the fridge and they do keep very well, unopened. To use it, you do have to mix it in a larger container of milk and allow it to work for at least 24-48 hours. Or you can treat a serving of milk at a time to use immediately.

@@OurLittleHomestead I've had good results with 'Seeking Health' in the past(purchased through Amazon). I admit, though that it has been a year since I've bought any (I had found that lactose-free milk lasts much longer in the fridge than regular milk and so I had taken to buying it instead and keeping the drops for emergencies). You reminded me to replenish, in fact, and low and behold, they've changed the strength of the drops! (Reduced by half for about the same price! - -Grrr!) I don't know how well this will work, now. I suppose that it will work roughly the same, but take twice as much. - -Not very cost-effective. I'm very annoyed. Good luck and God bless!

Hi Janie and subscribers. When you freeze eggs do they get rubbery? Do I have to pressure can milk or can I put it in my waterbath canner?
@OurLittleHomestead4 жыл бұрын
You must pressure can milk at 10 lbs pressure for 10 minutes...it's more like carnation millk. To be honest I just bring it up, steam vent for 10 minutes, let the 10 lbs come to a jiggle for a few minutes, cut the heat and leave it on the burner, let it come down naturally. It is really good in quarts that way. There are some other videos on youtube about canning goat's milk and cow's milk...watch a few and see what you are comfortable with doing. Eggs do not taste rubbery. They taste fresh if you use them up quickly (within 2 months or so)

I tried my hand at dry canning. I did 4 cases of dry bean and rice. I had moisture on the inside and re did several jars. Most of my lids didnt seal so I re did all those. I must have tried 3 times to get things right. Well there wasn't any more moisture but still a lot didn't seal. Also I didnt like killing all my beans and rice. Would it be better to freeze my dry goods and then vacuum seal the lids. Can I vaccum seal the flour? I'm pretty disappointed. But this is my first round. I don't can so I thought I'd start with something easy. Will my beans and my rice still be good? Also I don't have a vaccum sealer. Any suggestions on a good one? Thank you for your videos. You thought me so much!
@OurLittleHomestead4 жыл бұрын
I wonder why they did not seal? I've not had anyone with a problem; some moisture in jars is okay...it re-absorbs. I wrote about that issue in the UNDER VIDEO section of the video. Yes, sounds like you are in an area with issues; I would go ahead, freeze the items for a few days, remove them and let them come to room temp naturally, cutting holes in bag to let moisture escape bags, and then spread out on cookie sheets for a few hours, let them dry out really well, then put in jars and seal with vacuum sealer or 02 absorbers. Either works. The point is to kill them larva that hurt your food stores now so they don't haunt us later! Your beans and rice should still be good. Best way to check is to cook up a small batch of both and see. Beans and Rice together make a complete protein. You can also grind each into GF flours. Which is why I store them for GF bread. I have a FOOD SAVER brand with the BALL CANNING JAR LID ATTACHMENT kit with HOSE. Make sure the food saver has a HOLE in the unit for a hose to the jar vacuum sealer kit. It's about 1/4' in size hole in vacuum sealer. Not all of them have the hose att. hole. I bought two alike for a back up in case one fails. I paid (used) about $25 for each unit off ebay. Nothing fancy is needed. The plastic freezer rolls for food saver I buy off ebay as well in gallon size bag rolls.

Yes! Thaw, prepare and put in your portion sizes if needed, and can at 10 lbs of pressure for 75 minutes pints and 90 minutes quarts. Put in soups and stews and do the same pressure times. Meats in meals go the max pressure canning times. Meats must be pressure canned. They are low acidic. If you are OVER 1000' above sea level then go 15 lbs of pressure for the same amount of times.

Loved feeling validated by watching your video...If you want more Jello in bulk or less processed, consider purchasing a variety of freeze dried fruit, and powder it, and mix it along with bulk beef gelatin and your favorite sweetener for lower sugar varieties. Makes for a great cooking ingredient (especially in low carb or egg free cooking). Stay Well!

So far, I have not had to use much of my long-term food storage. I have been using regular pantry food (cans, jars, boxed mixes) and some home-dehydrated veggies I had not yet packaged for longer term storage. Here in southern Nevada I have been able to get fresh dairy products, green salads, fresh fruits and veggies and some pantry food delivered through Prime Pantry and InstaCart. Commercially canned tomatoes, whole kernel corn and green beans have been hard to find and have about doubled in price when they can be found. Supermarkets and Amazon are putting a limit on how much of these canned veggies a customer can buy at one time. I wish I had bought more of these products at the start of the pandemic. I have been able to get fruit Jell-o cups and boxes of individual chip/snack bags through Amazon/Prime Pantry to go with sandwiches made with packets of Starkist and Bumble Bee brands of tuna salad, salmon salad and chicken salad. I had a good supply of PPE at the start of the pandemic plus was able to add some additional canisters and spray cans of Lysol and Clorox disinfectants when news first broke of the pandemic in China. In hindsight, I wish I had bought more so I could have shipped more of these products in care packages to two unprepared households. From my long-term food storage, I have been using Nutrisystem individual freeze-dried cooked beef patties (bought on discount from Big Lots in 2014) to make some cheese burger meals and I opened a vacuum-sealed quart jar of pecan halves from 2014 to go with breakfast cereal. When our freezer no longer has any packages of bacon, I will start using my supply of Yoder's canned bacon. Still have plenty of Spam and Vienna sausage as well as frozen cooked sausage patties for breakfast meats. I am down to one canister of biscuit dough, so soon I will be using Heart Smart Bisquick that I vacuum canned in 2013 and commercially canned sausage gravy to make biscuit and gravy breakfasts as a breakfast treat. I have not yet started using my pizza crust mixes and bread machine mixes because I can still get frozen pizzas and loaves of bread delivered to my home. So far, not dining in restaurants and making all our meals at home mostly from pantry food is more of a fun challenge than a hardship. We have enjoyed homemade Seafood Gumbo with Rice, Pulled Pork Sandwiches with Crinkle Fries, and Beef and Veggie Stroganoff that were as tasty as any restaurant meal. Every day I am very grateful that I have a deep pantry as well as long-term food storage as insurance against hunger. I have no regrets that I bought what seemed at the time to be very expensive #10 cans and buckets of food storage when I now see how the prices of these products have doubled and tripled when they can be found for sale.

Hello. I have been without a refrigerator for a few years. Have you done any reading regarding a movement that advocates this. I am of the opinion that refrigerators have contributed to Americans` poor health. We have plans to build a cold room downstairs. Have you done a video on this? Thanks, Joe

You know, it's funny, my husband and I were just discussing a milk/cold trough with natural spring running through it for saving energy on cold storage. I found a refriderator and freezer that were 'separate' as well This would eliminate our second refridgerator, by having cold storage in under our porch...since it's a walk out basement, I was thinking a cold celler/milk house type think next to the basement...I talked to my friend and he thinks it would work out great with earth and cement on 3 sides of it. I need to do something with the all that porch concrete pour that goes up 8' out of the ground and on the slope side of house. Just in the planning stages... but it would be great for all our veggies I don't get canned up.

@@OurLittleHomestead My grandmother had a root cellar she used until she passed away. It was mounded earth on 3 sides, then the front side had a door and concrete steps leading down to the bottom...never mind the snake that wandered in once. (I never heard of her having a bad problem with them, though.) That's where she kept all of her canning, potatoes, etc. Stayed dark and cool all year round. Didn't have a spring in it, though.
