The thing about Mackerels is that the meat decays very fast. Fresh macs when you cut into them, the meat holds together much better. Perhaps eating no too fresh macs is one or the reason ppl in America doesn’t like mackerel sushi. The other reason is the stigma against mackerels. That they are a bait fish. Or trash fish.

You had two species of "mackerel" there: one being a true mackerel aka pacific mackerel, aka green back mackerel (the one with the zebra stripe pattern). That is the fish you make saba sushi with. The other "mackerel" was a jack mackerel, aka horse mackerel, also erroneously called a spanish mackerel in northern california by many but it is not a spanish mack. I prefer the name jack mackerel as it is in the same family as jacks and pompano fish, not a true mackerel. Sushi made from jack mackerel is called Aji. Both are good, but they have very different flavors and textures, the mackerel being softer and stronger flavored, and the Aji being firmer and more mild.

Excellent channel! Nice content for sure. I love to fish myself, and love eating fish!! I would like to mention one thing though... I have been totally into sashimi for years, and recently have found the following horrific truth that has changed my way of thinking! First of all, eating any type of fish straight out of the ocean is not safe at all!!!! Vinegar dipping is just not enough!!! The parasites and worms are very abundant in today's fish from the ocean. All this is incredibly scary! One of my buddies has been battling ( with doctors help) parasites and worms in his whole body, and in his eyes for 1 year now!!! Another friend that caught salmon on a camping river shoreline trip, ate some under cooked salmon, and 4-weeks later, found a rather large worm more than 10" long coming out of his rectum!!!!! I don't want to gross people out but, all this is 100% true!!!! Anytime you want to eat sashimi, you MUST deep freeze everything first!!! I know it's sucks to have to do this, but believe you me, once you get parasites, and worms in you, you are screwed!!!!!!!
