Great video.Grew up eating American eels from fresh water reservoir and the tidal Hudson River. Later only ate the freshwater eels above tidewater where they matured. Learned to cook them with garlic from an Italian. Many years later discovered unagi sushi. Unfortunately, the grocery chain that served the sushi stopped carrying Unagi.

Taku, I had an idea for your cutting board conundrum. Install a small threaded insert (get a nice, Brass one at a woodworking supply), after threading it into the the board, drill or ream it out to remove the internal threads, and then you'll have a receptacle for a spike to hold your fish for filleting, etc. Maybe drill a larger hole close by, and you can lay the fishes head over the hole for driving the spike through it. Just a thought. It could also easily be done to a polymer cutting board, at least if you don't consider the poly boards to be a complete sacrilege! Lol
