I did this with left over crawfish from a boil yesterday. Made a stock out of the heads - followed your steps just substituted crab for crawfish - came out DOPE (New Orleans, LA)

My wife and I have found a new love for Miso with a curry cube added to the broth, I have it almost every morning, adding a curry cube to your broth will add another level to your meal. Great video!

11:17 I'm sure Taku knows this since he's an actual chef, but for those of you who didn't, using dental floss (or thin sewing thread) cuts the egg better without distorting the yolk. In fact, many ramen shops do it that way.

I think the biggest thing preventing me from getting into this kind of cooking is the inability to know what to buy sauce-wise. On these videos there's always some cool sauce or paste used that has Japanese or Chinese on it. Even if I were to go to the Asian markets, I wouldn't know the first thing about finding that. Maybe a video on various sauces you use and what to look for in the markets?

This soup was basically the water he boiled the crabs in, with the shells added back in, plus dried kelp, dried bonito flakes, and the miso packet from the packed ramen. And he just put some chili oil in the bowl before adding the soup in.

he named the sauce in the video, its called rayu, a japanese chili oil, and you can buy it on Amazon. I didn't even know what rayu was before watching this video and a 30 second google search yielded a ton of answers. it's not that hard to look up things yourself.

Great thing about sauces is that you can always experiment with variations. While I wouldn't slather A1 BBQ sauce on these, you can try different chili sauces if you don't have access to the sauces used.

Taku, a man of many talents. Caught the crabs, flew the drone from and retrieved it on a kayak, made the beautiful bowls, made the best ramen I've ever seen, taught us to slurp our ramen and licked the spoon. Can it get any better? Thank you Almost forgot, love the crab carapace ladle.

Well, kinder to let them go gently, but you need to be quick if you don't want to get pinched! So you toss them by their back legs as gently as you can. Heartbreaking when they're just *barely* undersized.

Strongly recommend you get some Dungeness if you can get your hands on it.. I've had a lot of both, and Dungies have WAY more flavor, and a better texture too.

The entire stock of "instant noodles" are high in demand throughout Asia. Due to the pandemic. My comment is all about people eating instant ramen like me, because we all Can't go outside. The markets are on shutdown. So the only thing we can feast on are canned goods and noodles, it's cheap and easy to cook.

Good one Taku, not everyone like the guts/mustards or whatever people may call it that are in the crab, usually they will just rinse it away, but I like it. You might want to have a video to show how you extract the crab meat out of the shell and make it informative for people. Keep it up and stay humble. God bless you.

I can still remember eating Ramen at a tiny hole in the wall restaurant. The place is small enough that my slurping can be heard throughout the whole place and people just kept staring at me as I slurped lol. Loud and proud the best way to eat Ramen lol.

It's dove season here in New Mexico, and I've been saving up the carcasses from all the birds my friends and I have shot. I finally have enough to make a big pot of broth. The broth should be done just in time for dinner, and I'm getting ready to start mixing up my ramen noodles right now. Wish me luck!

you can also add a little bit of vinegar to the water while boiling an egg. it will prevent the egg from breaking too
