I made yakgwa that is good as a gift for Chuseok.
If you knead the dough too much, gluten is formed and the texture seems to change. Be careful not to bake too much when baking in the oven.
Also, put the yakgwa right into the house while it's hot right after baking~ That way, it seems like the yakgwa permeates well into the inside.

1. Put grain syrup, honey, water, ginger, and cinnamon stick in a pot and boil over medium heat.
2. When it boils, reduce the heat to low and boil for another 5 minutes (remove the foam).
3. Turn off the heat and let it cool

1. Add sesame oil to sifted flour, glutinous rice flour, and cinnamon powder, and gently rub with your hands to loosen clumps.
2. Sift again, add salt and mix
3. Add house syrup, honey, yolk, and water and mix with a spatula.
4. Gather together with a scraper (do not knead too much)
5. Wrap and refrigerate for an hour.
6. Divide into 20g each and cover with plastic.
7. Apply sesame oil to the yakgwa frame and press the rolled dough onto it.
8. Gently lift the end of the dough with a skewer and remove it from the mold.

10. Bake in a 170 degree oven for 15 minutes, lower the temperature to 70 degrees and bake for another 10 minutes
11. Take it out of the oven and dip it in the house syrup while it is hot.
12. Put it in a container and soak it in house cleaning for 2-3 days.
13. Take the soaked yakgwa through a sieve and dry it for a while.
