@@homiesgrooves Soy sauce is full of salt, that's why it tastes salty, just the same as using salt. Worcestershire sauce, ketchup, stock cube (maybe a Maggi cube) I've seen but never seen soy sauce. Also missing the butter beans and boiled dumplings. It's ok but it's not a perfect representation imo.

Much better than expected! 🇯🇲 Butterbeans in the Oxtail are a must, and lots of people put small boiled dumplings in too (just made of flour and water and rolled to about the size of those chillies you used, maybe a bit longer). Rather than soy sauce, more traditionally, we would use a maggi or stock cube, Worcestershire sauce and a bit of ketchup. Usually we caramelize the brown sugar at the start to give the stew it's brown colour or some people use gravy browning. Hope it helps for next time. P.S. - You really do need the scotchies, but I understand you know that and just couldn't get any. Maybe habaneros in a pinch?

@@riot_cats Oxtail and Rice and peas are Jamaican dishes, yes other cultures have their own oxtail stews but they don't contain scotch bonnet, thyme, scallion, and pimento (allspice) He didn't say it, but that's clearly what was requested and what he attempted to make

Years ago I traveled to Brussels quite often and would almost exclusively eat doner kebabs. But one meal I had at the hotel served a side dish of toast with honey, goat cheese and pine nuts. So simple yet utterly delicious. That side still brings great memories some 15 years later.

Pine nuts are life 🙏🏼 a very simple thing is white rice, ground beef and roasted pine nuts, as well as some broth to make it all stick together. I grew up on this stuff

Here in Denmark Oxtail used to be soooo cheap and hard to find sometimes, my mom knows a farmer/butcher so we would get kilos of it for no money because it didn't really sell, but once people find out how delicious oxtail was the price went up crazy 🤣 it was my little secret food 😭

Chef I'm coming here after seeing your oxtail grilled cheese video... I didn't know you did Jamaican style oxtail already! Your dish came out beautiful looking and I'm sure it tasted delicious. I have just a few humble recommendations to your recipe: 1. For browning the meat, use the brown sugar during this phase on a screaming hot pan. It will not only give them a beautiful color and crust, but the bitterness from the sugar caramelizing and burning will add a great complexity to the normally very fatty and rich tasting oxtail. When using this technique, remove all marinade bits as they will burn instead of creating a fond. 2. I love carrots and butter beans in my Jamaican oxtails and I think you will too. 3. For the real Caribbean people... Add more allspice berries than you'd think necessary. For the eyeballed beef weight in your recipe, I'd suggest a tablespoon to half a tablespoon. 4. In Jamaica the rice dish is lovingly called "rice and peas" but I'm sure you've had a dozen other comments saying the same, lol. There's a really tasty country-style variation of this rice dish which uses pigeon or gungo peas. I love this style rice personally, as I prefer the texture and taste. Thank you chef, Babe and your team for being awesome. 🥂
