Pakarkai kuzhambu (பாகற்காய் குழம்பு)
Idhayam Gingelly oil (இதயம் நல்லெண்ணெய்) - 12 tbsp
Mustard seeds (கடுகு) - 1 ½ tsp
Bitter gourd (பாகற்காய்) - 300 gms
Turmeric powder (மஞ்சள் தூள்) - ½ tsp
Fenugreek seeds (வெந்தயம்) - ¼ tsp
Curry leaves (கறிவேப்பிலை) - 1 sprig.
Garlic (பூண்டு) - 8 cloves
Shallots (வெங்காயம் - சிறியது) - 30 nos
Onion (வெங்காயம்) - 1 nos
Tomato (தக்காளி) - 5 nos
Red chilli powder (குழம்பு மிளகாய் தூள்) - 2 tsp
Asafoetida (பெருங்காய பொடி) - ¼ tsp
Coriander leaves (கொத்தமல்லி இலைகள்) - 2 tbsp
Tamarind (புளி) - 2 lemon size
Jaggery (வெல்லம்) - 1 tsp
Rock salt (கல் உப்பு) - As per taste
