Here's a curry so good I can drink it....literally! Cuz what's special about this is that it's so light a brothy. Think comforting chicken soup, but with the flavours of a red curry. Winter melon absorbs the flavours like a sponge, which is why it's such a popular vegetable used in curries in Thailand. And for hardcore eaters out there, there's blood! Cubes of pork or chicken blood is not uncommonly added to curries in Thailand-a great way to add iron to your meal!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I have had pork's blood cubes a few times in Chinese dishes. Fascinating to see it applied now and I can show friends how it looks. I remember enjoying it. The meal looks delicious.

I made this a few weeks ago and stir fry lemongrass & garlic with the chicken then added bamboo shoots to the broth. I loved it!

ooh this is really cool, i've only ever seen my mum use winter melon in chinese dessert soups, it has never occurred to me to use it for a savoury dish!

Hi Pai, i'm fan of you from Vietnam. In vietnam we cook winter melon with dried shrimp and spring onion, it is common food in the summer. Let's try this if you havent tried this before. And the last one is I love your recipes so much

Thats also similar soup my mom used to cook during a fiesta seasons in my province... but we dont have curry ... shes using chicken blood drop it on a rice and mix it with her original chicken soup with kinchay,ginger,garlic and onions and sometimes sshe add green papaya on it.

Indians make a stir fry or curry out of winter melon :) Never knew Thai people add chicken and make such a tasty curry out of it :) Need to cook it this weekend :) I love how you put a focus on a lot of local ingredients which are a great boost to one's health :)

In my language, Ilocano, we call winter melon "tangkoy" and we call white gourd "tabungaw." My mom says that they're cousins that's why their names are so similar.

Sounds bizarre, but watermelon rind (white part only) is very similar to winter melon (bland), and is also used by cooks in south east asia. It's also non-wasteful. I would imagine daikon radish would be your best choice after that. If you live in a major city, there should be an asian grocery which stocks winter melon seasonally.

Hi Pai. I live in a traditional farming village in Bali. We have our own Ayam Kampung (village chicken) so we can add chicken blood to the dish. I've never cooked with blood before and I'm a bit nervous about food poisoning. Do you know how I can collect the blood safely? Do I need to congeal it? How would I do that? Also as we don't have winter melon I was thinking of substituting with jackfruit. Jackfruit is used a lot here in pork stews and curries as it soaks up the stock and takes on a meaty flavor. Any reason why I can't use Jackfruit?

This reply's years late but maybe someone in the future can make use of it. Anyway, in my dad's family, when we kill the chicken we remove the feathers off the neck and clean it. After slashing through there, we then have the blood drip onto a small bowl with a smattering of salt scattered on the bottom. Then, let them sit. The blood congeals not too long afterwards. For pork blood, we do the same using large baking pans. You can stir gently at the start to help the salt distribute, but leave it alone for the most part. Blood from healthy animals is normally sterile, so just keep your utensils clean and be sure to heat the blood blocks through when cooking.

I'll have to try winter melon. I've tried blood before. I don't really like the metallic taste of organ meats. I also tried tendons when I went to a restaurant the other day, and also not really a fan. I'm guessing if you grew up with it, the texture would be palatable. I really didn't like it. I'll try it again, because everything thing needs at least two tries.... I'm guessing that it still will be not something I'd order in the future...

Tried winter melon at in spicy schezuan hot pot restaurant and knew I needed to cook with it at home. Didn't use pork blood but I did add enoki mushrooms towards the end and it was sooo good! Curry as a soup... I think I'm in love.

Sweet basil is similar to Thai Basil. Holy Basil is used in Indian worship. It flavor more like pepper + clove & not sweet.

But your chicken won't be as flavourful cuz you're not simmering it in the curry paste...what you could do is remove the skin and fat before hand.

lol - hi Stephen! Yes I can be a tiny bit squeamish on some things (Pai would say "Very!") - so I did have a "hmmmm" moment with the congealed blood ... but I was brave and gave it a shot, and it turns out to be really good! Not what I was expecting at all. Otherwise off the top of my head I'm not keen on brains, organs, chao tofu, natto or getting anywhere near balut (sorry to my Chinese, Japanese and Filipino friends). :)
