How do u know how hot the Chili's or store bought paste will be I usually like it one star hot. Lol according to resturants I've eaten at. I don't want to ruin all those groceries in a too spicy dish. I do eat spicy food tho. Just not over the top make u sweat hot. Lol thank you for your wonderful videos and pretty presentations!

Also, another trick i was taught at the Blue Elephant in Bangkok. Fry the curry paste on medium high heat, add 1 ladle of coconut milk, wait til oil floats on top. Repeat same process 2-3 times and then add rest of the coconut milk. This resulted in a quite rich flavour and actually made a difference. However, I love your channel Pai;)

Can’t you simply fry the paste in straight coconut oil? Especially when lots of commercially available milk has emulsifiers etc

When you say "repeat the process" does that mean you started with only 1/3 or 1/2 curry paste, then coconut milk, then on the 2nd time you add another 1/3 or 1/2 curry paste, fry it and then add another ladle of coconut milk, OR the 2nd time you just add more coconut milk until it separates?

I was walking my dog Jenny the other day after a severe hail storm and I found a kifir lime tree. It's been there this whole time but I didn't know until the hail knocked down around 200 kifir limes. I recognize them right away. I took a few home and used them in the Thai food I had just bought 😋

Hi, I made this today and it turned delicious. I bought store bought thai red paste had to use only 2 tbsps. I didn't have fish sauce, so just used salt and water. It was still heave. I used cauliflowers, peppers, and broccoli as veggies. Fantastic! Thankyou.

I just made it and it came out fantastic! Very quick (30 mins total), easy, and healthy. I used store bought red curry paste and substituted the squash for Japanese pumpkin because it was on sale. I added green beans, 1 bell pepper, and a can of baby corn about a minute before I turned the heat off. You can really add whatever you want to this recipe and it'll come out great. You can easily customize based upon any dietary restrictions, or whatever you have on hand.

I made this for lunch for my family and it was absolutely delicious! I used store bought red curry paste and used approx 2 tbsp since I didn't want it extra spicy-came out PERFECT! I served this with your long green beans recipe and fried tofu recipe- ALL GREAT!! I'm so happy I found your channel :) Tasted like I was at a thai restaurant!!

I just made this. Was hard to source everything but I was able to get everything , even the Kapi for fresh hand pounded red curry paste. This dish in incredible ! I added additional fragrance by adding 8 - 10 Makrut leaves torn into small pieces while adding all the liquids. I also added half a butternut squash, and carrots for additional body and texture and half a red pepper + half a orange bell pepper for more color to the dish. Incredble dish and reminds me of curries I had in Southern Thailand. Kob khun chef khap.

Ok. So I've been making curry for years & it is the one I considered my best dish. As it turns out, I've been making curry wrong for years 😳 sauteing the curry makes such a difference, plus I used some pre-made curry paste & also added in all the components to add freshness (except I didn't have shrimp paste) and I think that added a ton. I can taste that I used actual palm sugar instead of brown coconut sugar (I've been snacking on the hard chunks, so I recognize the unique taste 😹) I've actually never had it this good at a restaurant either. Thank you so much for blessing me with the gift of truly exceptional chicken coconut curry 🤤😻😻😻😻😻😻😻😻😻😻😻😻 I ate a bowl to see if it needed anything... It doesn't. Perfection😌

This curry was extremely delicious, I added in some vegetables that I had, spinach, pumpkin, mushrooms and sweet pepper and it turned out amazing. This is a great way to make veges taste incredible.

I don't know if you remember or not but you added a photo of my red curry a few years ago to one of your newsletters. I just made this dish again and I can't help getting emotional over it it's that good and sort of sentimental to me. I recently had this dish at a Thai restaurant here in Florida and not trying to brag but seriously why does mine taste so much better. Through your channel I feel I gotta decent grasp on Thai cuisine as its one of the best foods in the world to me...I deem you the Queen of Thai cooking. Ever since I discovered your channel I grew a tremendous amount of appreciation for Thai food...more than ever before because you break it down to simple steps so anyone around the world can cook this amazing cuisine at home. I would like to see more videos in Thailand if possible...through your recipes I have developed a deep desire to visit Thailand...I want to taste everything while I'm there. Thank you for your work. You have "demystified" Thai cooking for me and I absolutely love it. I am a type 2 diabetic and I control my blood sugar with diet. I have used sucralose and/or stevia for the "sweet" flavor it it seems to work well.

i make this all the time, it also goes great with bamboo shoots you can find in the asian aisle of most grocery stores, I also crumble up peanuts and put it in as well for an extra crunch.

This is the 3rd recipe of yours I made. Since we already just finished the pot of your turmeric chicken soup recipe I decided to go with shrimp in the red curry. I made garlic and lemon zest sauteed shrimp separate, which I added after I made the curry with the squash and basil. I also added fat cut onion and thinly sliced tomatoes. It was soooo "ono broke da mouth" deelicous! I'm loving the fish sauce! So many wonderful different tasting ingredients that blend so well together. Next I will be making your green curry recipe!

I forgot to get chicken broth, but had unsalted beef broth in pantry. It came out delicious. The wife and kids loved it. I like the Kabucha Melon. It balances out the spiciness, with a cross between a sweet potato and pumpkin flavor.

Thank you for the tips on adding little bit more palm sugar, fish sauce and coconut milk when the store bought red curry paste is too spicy. Also adjusting the chicken broth also balances the flavor. Every time I add of each more ingredient . I’m constantly tasting it to make sure I didn’t go over board seasoning it.

Made this tonight using kabocha squash, cubed eggplant, and chicken breast. Thanks for the tip on adding breast meat in later--it stayed nice and tender that way. The kabocha and eggplant cooked at about the same rate. I didn't have the ingredients to make homemade paste, but the Maesri brand has a great spicy kick using ¬4 1/2 Tbsp. for this recipe. Everything came out perfect; this is a keeper.

Long story short: I do everything wrong and this dish turned out amazing! Short story long: I wanted to make a quick, healthy dish to use up some veggies and leftover rice. I grabbed a jar of the Thai Kitchen red curry paste, which is typically considered very low tier for curry pastes. I don't have access to lime leaves, kefir Limes, or Lemongrass, im in the Midwest! I chopped up tons of veggies, kale, red, yellow, orange, and green peppers, half an acorn squash, had some stale kale, tons of green onion and garlic, and chicken breadt that need to go. I prefer thighs, but gotta use what you got, right? I used the whole jar of curry paste, chicken buillion for the stock, a whole bundle of green onion and half a huge head of garlic. I used a regular everyday lime, used the whole shredded zest from that. Got lucky enough to find a pack of Thai Basil on my way out the store too. Ended up adding a whoke nother can of coconut milk just cuz i wanted it extra creamy and rich. Squeezed the lime juice on right as I served it and omg it was BOMB. I had to stop halfway through yo make a fresh pot of rice cuz we didn't have enough for seconds. I thought I was too exhausted to cook more but this dish invigorated me! 🤯 Make it wrong, make it right, just be sure you make this dish tonight!

Thanks for showing how to make home made curry paste, although it looks like too much trouble to find all those ingredients. Still, it may be the only way to make a mild curry with less heat that the kids can tolerate better.

This recipe is excellent - the flavors are so well balanced. I did make a little slurry of cornstarch and water to thicken the sauce while it was simmering, and that made it perfect for me. I also cooked the red peppers along with the squash, because I prefer them softer. So happy to have this recipe on hand now! :-)

Butternut Squash is very similar to pumpkin, so I guess is a yes. Just check it time to time to don't overcook it.
